Soy-Poached Chicken

Traditionally this bird is taken from the liquid and served without further cooking, hot or at room temperature. But I like to finish it by placing it in a hot oven where, in just five minutes, it develops a dark brown, crispy crust; this browning can also be done a few hours later. Perhaps the best thing about this sauce is that it can be used time and again, as long as you freeze it between uses (or refrigerate it and bring it to a rolling boil every few days) and top up the liquids now and then. Mei Kuei Lu Chiew wine is available at most Chinese markets for about $2 a bottle, and yellow rock sugar can be found at Chinese markets too.

Drunken Chicken

This simple steamed chicken is usually served cold, and it’s refreshing on warm summer days, like a good chicken salad. Shaoxing wine, with its full, distinctive flavor, is best for this dish, but Fino (dry) sherry is a good substitute. Start this as long as a day in advance; the more marinating time, the better. If you don’t have a large steamer, you can use a big pot with a rack set inside. Or simply poach the chicken, as in the variation.

Beef Tenderloin in Caramelized Sugar

Though you occasionally see this technique in other cuisines, I know of nowhere but Vietnam where caramelized sugar is used as the basis for a savory sauce in such a wide variety of dishes. You see it with pork, beef, shrimp, finfish, chicken, and even frog. You see it in fancy urban restaurants and in rural three-sided structures. Completed by plenty of onions and black pepper, the result is wickedly forceful, decidedly delicious, and, in the sauce’s dark brown glossiness, downright gorgeous, an astonishing creation given the number of ingredients and the time it requires. See page 500 for information on Asian fish sauces like nam pla. Other cuts of meat you can use here: boneless chicken thighs, pork steaks cut from the loin—both of which will require longer cooking times—or any fish or shrimp (see Fish Fillets Poached in Caramel Sauce, page 232). Sticky Rice (page 508) is not entirely traditional here, but it’s great, as is any other plain rice dish. A strong-flavored salad (like Green Papaya Salad, page 198, but without the shrimp) would round things out perfectly.

White Cut Chicken

Served throughout China to celebrate the New Year, birthdays, and anniversaries, this simple poached chicken is often accompanied by no more than soy sauce for dipping, though the equally appropriate Ginger-Scallion Dipping Sauce (page 583) is my favorite. Since this is served at room temperature or cold, you can easily make it ahead of time.

Steak au Poivre

This remains a luxurious dish, though it is quite simple. Traditionally, so many cracked (not ground) black peppercorns are pressed into the meat that they form a crispy crust. For some this is overwhelming. But if you slice the steak before serving, the surface area per bite is not as great. Or you could, of course, use much less pepper.

Zarzuela

Zarzuela—the word means “medley” in Spanish—unites a variety of fish and is, like bouillabaisse, a dish whose ingredients can be varied according to what you can find. The traditional sauce accompaniment for Zarzuela is Romesco (page 606), but the variation makes that superfluous. I love this with crusty bread.

“Deviled” Pork Chops

A laughably simple weeknight dish that packs a lot of flavor. Try to buy shoulder (rib) end pork chops, which will dry out less in the pan than others. Serve with a salad and a cooked vegetable or starch, like any of the mashed potato dishes on page 480. Other cuts of meat you can use here: bone-in chicken thighs (which will require more cooking) or pork medallions cut from the tenderloin (which will cook more quickly).

Choucroute de Poissons

A choucroute need not be meat, as is the more familiar one on page 404. Alsace, where the dish originated, has a long tradition of combining sauerkraut with fish. As is always the case, buy sauerkraut that is either sold in bulk or packed in plastic and contains no more than cabbage and salt. Serve with boiled potatoes.

Pork Chops with Prunes and Cream

A Norman recipe, easily identified with the region because of the combination of dairy and meat. It may sound overly rich, but pork is so lean these days that the added fat is welcome, and the taste is incredible. A wonderful dish for midwinter; serve it with simple boiled potatoes or rice and a steamed vegetable. Other cuts of meat you can use here: veal chops or bone-in chicken breasts.

Red Fish Stew, Fast and Spicy

This is a fast stew you can make with a variety of fish—a few scraps if that’s all you have—or with one or more types of prime fish. For example, it’s great with shellfish only: shrimp or a combination of shrimp, scallops, and a mollusk, like mussels (make sure they’re well washed). But you can make it with a single piece of sturdy fish, like monkfish or halibut. In any case, be sure to serve it with plenty of white rice, preferably basmati.

Fish with Raisin Almond Sauce

This is a typical Eastern European dish, rich with flavor, its sweetness tempered by the lemon juice. It makes a nice presentation, especially if you use a meaty fish like carp. The same technique can be applied to any fish fillet: reduce the cooking time to 10 minutes (or less; the fish is done when the point of a thin-bladed knife inserted into the thickest part meets little resistance). You might want some mashed potatoes or rice here, along with a simple salad.

Coastal-Style Roasted Sea Bass or Other Large Whole Fish

Try to use branches of fresh oregano, marjoram, or fennel here; they really make a tremendous difference. The first two are grown by many gardeners, and a good gardener can probably spare some. Bronze—herb—fennel grows wild all over southern California and is easy to find (it’s also grown by some gardeners). Occasionally you can find one of these in a big bunch at a market, too; you’ll need a big bunch to try the grilling option. In any case, choose a fish with a simple bone structure so it can be served and eaten easily. The best for this purpose are sea bass, red snapper, grouper, striped bass, and mackerel. One advantage in using the oven over the grill is that in roasting you can add some peeled, chunked potatoes to the bottom of the roasting pan as well; they’ll finish cooking along with the onions.

Skate with Brown Butter

I once thought that poached skate with brown butter was the highest and best use of this relative of shark, but then I began to sauté the fish, which is even better. Which you prefer depends, to some extent, on your tolerance for butter. I offer the sautéed version first and the more classic poached fish as a variation. For either, it’s easiest if you buy skate that has been “filleted,” that is, removed from its central cartilage (if it isn’t, just cook it a little longer; it will practically come off the “bone” by itself). But never, ever buy skate that has not been skinned; you simply will not get it off unless you resort to a pair of pliers—and even then it won’t be easy. This is a rich dish; serve it with salad and a light vegetable, no more, and you’ll be satisfied.

“Grilled” Mackerel with Garlic and Rosemary

I had a dish similar to this one in Provence at least twenty years ago and have never stopped making it. Few preparations do as much justice to dark-fleshed fish. Like many “grilled” dishes, this one is better made in the broiler, where you have far more control. A potato gratin, like the one on page 482, would be suitable here, as would Peasant-Style Potatoes (page 477). Of course, a simple vegetable dish or two would also be wonderful, as mackerel is pretty rich in its own right.

Fish Couscous

Couscous is a small pasta—not a grain as most people believe—as well as the name of almost every North African dish that contains it. So there are innumerable fish, vegetable, meat, and chicken couscous dishes (see pages 526 to 527 for a couple of others). You can cook the couscous separately (see page 526) or steam it on top of the simmering stew, a nice touch for which you will need either a special utensil called a couscoussière or a steamer rigged inside of a covered pot in which you cook the sauce. If you are not comfortable cooking pieces of whole fish, substitute a firm fillet like red snapper or grouper and reduce the fish cooking time to about 10 minutes; do not overcook.

Baked Whole Fish with Dates

Dates, of course, are a staple food of the Sahara and many other deserts; they grow on palm trees, keep forever, and, to nomads, are far more important than any bread product. But only in coastal North Africa and parts of the Middle East does date country meet the sea and a dish like this come about. Substitute prunes for dates if you prefer. A simple pilaf, chosen from among those on pages 513 to 514, would be great here, as would Houria (page 191).

Grouper or Other Fish Steamed in Its Own Juice, with Cilantro Sauce

This is an interesting technique: the fish is oven steamed, with just a tiny bit of liquid, thus retaining all of its own juices. Traditionally the packages would be made with banana or other large leaves, and they would be buried in hot ashes. Foil is much more convenient, if not quite as interesting or flavorful. If you make this with fillets, the cooking time will be under 10 minutes. Serve this with Peasant-Style Potatoes (page 477) and a lightly dressed vegetable.

Grilled or Broiled Fish with Lime

This dish is popular throughout Southeast Asia (I had it in Vietnam), where firm-fleshed river fish are plentiful. Carp is an excellent choice for freshwater fish, as is wild catfish (I’m not a fan of farmed catfish), but red snapper or sea bass is also good. Lime leaves are not always available; substitute grated lime zest if necessary. See page 500 for information on Thai fish sauce (nam pla). This would be great with Green Papaya Salad (without the shrimp, page 198).

Stir-Fried Pork in Coconut Milk

Akin to the preceding recipe, this one and its Japanese variation use additional liquid. This, plus the braising time, makes for a saucier dish that can be stretched, with white rice, to serve more people if you like. But in any case, it’s delicious. See page 500 for information on Asian fish sauces like nam pla. Other cuts of meat you can use here: boneless chicken.

Lemongrass Fish

Lemongrass, the seasoning most closely associated with Southeast Asia, plays a major role here, despite the presence of many other ingredients. Nothing else “cleans” the taste of the fish quite like it. Serve with any rice dish.
