Stew
Pork Stew with Olives and Green Beans
If hojiblanca or cacereña olives are unavailable, use other Mediterranean olives.
Potato, Leek and Fennel Soup
This recipe can be prepared in 45 minutes or less.
The fennel is the special flavor in this soup.
Turkey and Pinto Bean Chili
Just like some Mexican moles, this chili has a bit of chocolate in it. Serve sour cream and shredded sharp cheddar cheese alongside.
Shortcut Pork Cassoulet
To begin, offer a bowl of brine-cured green and black olives, another of marinated artichoke hearts, and some pâté and toast. The cassoulet needs only red wine and a loaf of good French bread as accompaniments. A pear or apple tart would add an appropriate French country flourish.
Smoky Shrimp and Halibut Stew
This is fantastic with coleslaw and warm biscuits. What to drink: A not-too-oaky domestic Chardonnay or a white Burgundy, such as one from France's St.-Véran region.
Spicy Lamb and Chorizo Chili
Cilantro, sour cream, grated cheddar or Jack cheese, chopped red or green onion and salsa would be great toppings. Look for chorizo in the refrigerated meat or deli case.
Sausage and Lentil Stew
Sosizza chi Linticchi
The hearty, warming goodness of this one-course meal is only increased by its utter simplicity of preparation. Accompany the stew with crusty bread.

Bouillabaisse
A 1980 charter signed by 11 restaurants (7 in Marseille) dictates what kinds of fish form the basis of an authentic local bouillabaisse. These are generally unavailable here, so we suggest using the freshest nonoily fish you can get, preferably three to five different kinds. As long as we were taking liberties, we also added lobster and used fennel fronds in place of pastis. And though the broth and croutons are usually served separately from the fish itself in Marseille, we enjoyed everything together.

Gratineed Chicken in Cream Sauce (Poulet à la Fermiere)
This recipe was inspired by a dish that a group of our food editors enjoyed at Chez Maître Paul, a Paris bistro. As the name suggests, poulet à la fermière contains a farmwife's bounty—chicken, cheese, vegetables, and herbs.
Turkey Green Chili
Poblano and jalapeño chiles, tomatillos, and cilantro account for the recipe's title. Serve with: Mexican beer, warm tortillas, green salad, and lemon sorbet.
Summer Seafood Stew
There's a lot of liquid here, so be sure to use a very large pot to prepare the stew.
Beef and Bean Chili
A fine version of a hearty classic.
