Lamb Meatballs in Green Curry Sauce

While flipping through an Australian food magazine, my eyes were drawn to the appetizing green sauce in a photo of Indian-style meatballs. I am one of those people who do not rate cilantro as my favorite herb, but when I developed this dish to replicate the recipe at home, the sauce proved as delicious as it was attractive. Cook some basmati rice to serve with the meatballs.

Beef Meatball Bourguignon

When you want the classic French bistro flavors of beef bourguignon, but don't have the time for tenderizing chunks of tough meat with long simmering, make the meatball version. An Australian Shiraz is a good bet for the wine because it usually isn't aged in oak, so the sauce won't have any off, woodsy flavors. Choose among boiled new potatoes, egg noodles, or even polenta as a side dish for this ragout.

My life is all about banging things out, getting things done, moving fast—but sometimes a detour from the fast lane can be a good thing, even for me. Years ago, Gwen and I were on our way home from a road trip to the Canadian Maritimes when we were forced off the highway by some epic construction. We ended up on a wandering road that took us through a charming series of dying industrial towns. There was not much to see... and definitely nothing to eat. But then, in Fall River, Massachusetts, right at the border of Rhode Island, we stumbled across culinary gold: an old gas station converted into a root beer stand. The owner, a retired A&W root beer guy, was behind the counter; all he served was root beer in frosted glasses. Our root beer came with a long lecture about chilling the glass, not the root beer itself (that kills the taste). We sat at a broken-down old picnic table and sipped. I'm all about root beer, and that roadside glassful was the best I ever tasted. This recipe is my stab at bringing that taste to cake—because the only thing better than root beer is root beer plus cake. There's a mad-scientist component to this recipe: when you whisk the baking soda into the molasses and root beer, there's going to be some crazy bubbling up going on, straight out of sci-fi. Don't worry: it's completely normal.

OMG Homemade Marshmallows

You only have to make marshmallows once to see how ridiculously easy they are to create. You'll be tempted to keep that fact to yourself, though, when your friends freak out over them. Go ahead, let them think you spent the day making these tender, airy squares of fluff, when it really only takes about 15 minutes of fun in the kitchen. To avoid stickiness, try to make marshmallows on a dry day.

Brown Turkey Stock

A spectacular gravy begins with pan drippings, but the true flavor base comes from a good stock. The real selling point of this stock is that you can make it way in advance of Thanksgiving. And any leftovers of the stock will enhance the soups and sauces that follow the big feast.

This cranberry chutney is essentially a classic sauce, jazzed up with the more vibrant flavors of pineapple juice, pepper flakes, and clove. The good news is that while it's supermarket-friendly—not hard to find ingredients—it tastes remarkably more complex and nuanced than the short ingredient list would lead you to believe. Aim to make it several days ahead so that the flavors have time to mingle and mellow.

Agave nectar, a product of the agave plant better known as the source of tequila, blends beautifully with Old World Spanish sherry for a gentle sweet-and-sour glaze and luscious gravy. Because agave nectar has a low glycemic index, it's the new darling of the health-conscious crowd who are trying to lower their sugar intake. Although making the brown turkey stock for the gravy is an extra step, it can be done weeks ahead and frozen, and it's the secret behind a truly memorable gravy.

Chorizo Corn Bread Stuffing

This corn bread stuffing is a stroke of genius. It's so easy, you'll be making it far more often than once a year for Thanksgiving! Shelley Wiseman, author of Just Tacos, knows a thing or two about corn—and not just in tortillas—and she decided to skip the process of drying the cubes of corn bread in the oven. That alone is a huge time-saver. To enliven the corn bread, she balances the flavor punch of chorizo with the sweetness of onions and corn kernels. When it comes time to bake it in a dish (not inside the turkey), she forgoes the old process of covering the stuffing—which allows steam to soften the dried bread—because the bread isn't dry. She simply bakes it uncovered, so that the top gets golden with crispy brown edges, while the interior stays moist.

Herbed Rösti Potato Cake

The Thanksgiving table would not be complete without potatoes to absorb all that delicious gravy. Mashed potatoes are the most common, but sometimes you yearn for something with a bit more texture. That's where the Swiss rösti potato cake is ideal. Although you'll see some recipes for rösti that start with raw potatoes, it's more commonly done with whole cooked boiling potatoes that have been chilled at least eight hours, if not a day ahead. Once they are peeled and coarsely grated, you pack the shreds into a skillet and brown the cake on top of the stove. Instead of going through the angst of attempting to flip the cake over to brown the other side, just turn on the broiler and it browns easily in a fraction of the time.

Pan-Seared Five-Spice Duck Breast with Balsamic Jus

The first time I made duck, I prepared traditional Peking duck using two enormous birds special-ordered from the butcher. After three days of painstaking preparation, every surface of my kitchen was covered in duck fat, and the ducks had shrunk down so much I only had a few ounces of meat to serve the six people walking through my door for dinner. Duck breasts are the answer! You can find them in the freezer section of your market if you can't find fresh, or you can special-order them from your butcher. They're much less fatty than duck legs or thighs, and they don't shrink much at all. In this recipe, the sear on high heat gets the skin nice and crispy. Aromatic five-spice powder gives the duck an exotic flair. An easy pan sauce results from deglazing the pan with wine and balsamic vinegar. Duck and Pinot Noir are meant for each other. An elegant Russian River Valley Pinot Noir is a perfect match, and stands up to the aromatic spice rub.

Spinach-Basil Pesto

This pesto if very simple, and its mild, herbaceous flavor makes it the ideal companion for just about any of the meatballs. While many pesto recipes call for pine nuts, we prefer the flavor (and lower price) of walnuts. Try finely chopping them and adding them right at the end for a nice, crunchy texture. We also love this as a healthy party dip, especially because it has no raw garlic—your guests will thank you too! Just cut up some carrots, cherry tomatoes, bell peppers, and celery and you're ready to go. You can swap arugula for spinach if you prefer. Pesto freezes well and will keep for up to three months in the freezer.
