30 Minutes or Less

Salmon with Hoisin, Orange and Bok Choy

To crack coriander, place in a resealable plastic bag and tap with a mallet. Hoisin adds sweetness to this healthy dish. It can be found in the Asian foods section of many supermarkets and at Asian markets.

Peachy Keen Chicken

Although the recipe calls for boneless skinless breasts, you can use chicken tenders or a cut-up chicken with skin, but the cooking time will vary (see Cook's Note). If you want to use fresh or frozen sliced peaches instead of canned, add 2 tablespoons honey to the marinade. Grilled pitted fresh peach or nectarine halves are great alongside. Serve with potatoes and a crisp green salad. Any leftover sliced chicken is great on a sandwich with a little lettuce, honey mustard, and peach jam.

Citrus Tilapia

This light fish entrée gets a flavor boost from a citrus glaze made from fresh lemon juice, orange juice, and fresh ginger. For stronger, more acidic flavor, add lemon zest and additional juice. Make sure to use a high-quality 100 percent orange juice that is freshly squeezed (not from concentrate).

Moroccan Halibut and Carrots

Cinnamon, cayenne, and mint give this healthful main course some exotic North African flavor.

Smoky Greens and Beans

Thanks to paprika, this meatless main has a spicy, smoky flavor. Domestic smoked paprika can be found at some supermarkets. For a spicier kick, use hot smoked Spanish paprika (Pimentón Picante or Pimentón de La Vera Picante), which is sold at specialty foods stores and at tienda.com.

W is for Whole-Wheat Teething Biscuits

Many teething biscuits crumble and break too easily. These are a little sturdier and safer for baby to eat.

Salted Mint Lassi

Yogurt drinks are popular throughout India—some are flavored with sugar or fruit, while others, like this one, are more savory. "I give sample tastes of this all the time at the restaurant," says Susan Feniger, "and people are shocked by how refreshing it is."

Kimchi Quesadillas

Roy Choi approaches food like a graffiti artist: "I just want to put it out there and be gone before anyone knows I spray-painted on the wall." So if you've been following Kogi BBQ-To-Go tweets but haven't been quick enough to find the truck, these fusion quesadillas should satisfy your cravings.

Roasted Mackerel and Avocado Salad

While it may sound unusual, the buttery flavor and texture of avocado really complement robust fish such as mackerel. Pleasantly bitter radicchio, delicate yet deep-flavored parsley, and a mustardy vinaigrette balance the richness.

Yellow Rice (Arroz Amarillo)

Sofrito, a sautéed vegetable mixture that typically contains garlic, onion, and bell pepper, is used as a seasoning in much of Latin America and the Caribbean. Here, it flavors yellow rice. The color comes from annatto seeds—which have an astringent, slightly peppery flavor—heated in oil until bright red-orange.

Peppery Pasta Carbonara with Poached Egg

Pasta and pork—what's not to love? Spaghetti alla carbonara traditionally calls for guanciale (cured pork jowl), but bacon is weeknight-friendly and every bit as satisfying. Raw egg is typically mixed into the hot pasta, but a poached egg on top feels more substantial while still providing the requisite creaminess.

Panko-Crusted Chicken with Mustard-Maple Pan Sauce

Most of the ingredients used in this recipe are staples, so all you need to buy are the breadcrumbs, chicken, and parsley. Look for panko in the Asian foods section of supermarkets and at Asian markets.

Lamb Chops with Pomegranate and Dried Fig Relish

Look for sweet and flavorful pomegranate molasses at specialty foods stores and Middle Eastern markets.

Zucchini, Corn, and Basil Fusilli with Bacon

Summer's bounty gets even better when it's combined in a fresh-tasting pasta.

Okra with Scallion, Lime, and Ginger

Steaming unlocks the succulence of okra. Here, the pods are tossed with slivered ginger and a Vietnamese-inspired scallion oil in an all-purpose dish that's great with grilled steak or chicken, or with nothing more than a fragrant bowlful of jasmine rice.

Watermelon and Cucumber Mint Tsatsiki Salad

Watermelon and yogurt may sound like unlikely bedfellows, but this refreshing dish deliciously disproves that assumption. Flaky shards of sea salt, added just before serving, highlight both the melon's sweetness and the sauce's savory tang.

Seared Mahi-Mahi with Green Gazpacho Sauce

Gazpacho (a traditional chilled soup that originated in Spain) becomes a sauce for fish fillets.

Grilled Skirt Steak and Pepper Sandwiches with Corn Mayonnaise

This incredible sandwich is so filling that you won't need a side dish.
