Raspberry Iced Tea
Gina: You don’t think my whimsy ends with cocktails, do you? Sweet iced tea is the elixir of the South, so I decided that our Neely “house” tea needed to have a little pizzazz. Honey, I found it by combining fresh raspberries with hibiscus tea, which has a brilliant crimson color and beautiful fruit-and-floral flavors.
Pucker-Up Lemon-Limeade
This strong, tart sweet drink—made with equal parts fresh lemon and lime juice—can stand up to plenty of ice, and the addition of chopped crystallized ginger gives each sip a tingly, refreshing heat.
Seared Okra and Tomatoes
Pat: Few flavor combinations sing “summertime in the South” more than okra and tomatoes. Some people find okra intimidating to cook, but it’s really very simple. If okra is cooked for too long over too low a heat, it can turn slimy and limp. The secret is first searing the okra over a very high heat, then finishing it for a few minutes in the piquant tomato sauce. This method prevents the okra from getting gooey (frying okra does the same thing). Okra and tomatoes are great alongside fried fish, or any roasted or grilled meat, and they also pair well over a creamy starch like grits or spoonbread.
Tri-Color Salad
This was one of the first dishes that brought the taste of contemporary Italy to the Italian-American restaurant scene. It came into vogue in the early seventies when red radicchio and arugula became available in the States. While the Italians will toss any vegetable in their salads, I think the addition of endive was a play on the color of the red, green, and white Italian flag. This salad is a great base for additions, from walnuts and pine nuts to different cheeses and cold cuts, such as salami or turkey, and even fish such as tuna, shrimp, or poached whitefish.
Tuna Melt
This sandwich is so old-school—and I love it. Using water-packed tuna and a reasonable amount of low-fat mayonnaise takes this diner-food classic off the “Do Not Eat” list.
Tomato and Mozzarella Salad
The Italian name for this salad is insalata caprese, and it’s a shining example of the brilliance of Italian cuisine: a few fresh, simple ingredients at the peak of their season combined to produce exceptionally complex flavors. It hails from Capri, a small island off the coast of Naples in the region of Campagna, where my family comes from. Buy only the best mozzarella, tomatoes, basil, and olive oil you can find to make this salad. It may be naturally fresh and healthful, but I have kept fat and calories to a minimum by keeping the olive oil to a minimum—only 1 tablespoon for 4 servings.
Wedge of Lettuce with Bacon and Blue Cheese
Who doesn’t love a big thick chunk of iceberg lettuce with bacon and blue cheese dressing alongside a juicy cowboy-cut ribeye? It’s one of my favorite steakhouse meals. Problem is, at 700-plus calories and more than 80 grams of fat—for the salad alone!—it’s a very bad bargain. Thankfully, the availability of reduced-fat blue cheese means you don’t have to choose between the steak and the salad.
Tricolor Salad with Orange and Fennel
We eat a lot of swordfish when we are in Sicily, where my mom is from. She always orders a salad of oranges and fennel or oranges and onions to accompany it. When I cook swordfish anything at home, I always have oranges in the salad, for Mama.
