Wild Forest Mushrooms with Garlic
During the summer monsoons in Santa Fe, we forage for wild mushrooms—mostly porcini-like varieties—in the high-altitude forests of the nearby Sangre de Cristo Mountains. We’re always looking for new ways to use our earthy, robust bounty, and this woodsy taco is one of our favorites. Buy wild mushrooms in at least three colors or textures. They’ll add interest to the filling and give you the option of mixing less costly types with the more pricey ones. Avoid shiitakes and enokis, which don’t pair well with wild mushrooms (the enoki are too acrid, and the shiitake too powerful) or lobster mushrooms as they don’t cook at the same rate and remain hard. Aim for a mix that is woodsy, rich, delicate, and very flavorful. Good substitutions for fresh wild mushrooms are a mix of dried wild mushrooms and fresh criminis, or dried porcini and thinly sliced portobellos.
Squash Blossoms with Green Chiles and Cheese
These tacos are a great way to enjoy the harvest from your late summer garden. The delicate orange-and-yellow flowers of squash plants are a prized treat through out Mexico and the southwestern United States. Squash blossoms are an ideal partner to the green chiles grown in Hatch, New Mexico, widely available in the Southwest during late summer and early fall (see Sources, page 167). If you can’t find New Mexico green chiles, you can use Anaheims, their slightly less robust California counterpart, found in produce markets throughout the country. I like to serve these tacos with a cold, citrusy beverage—margaritas for the adults and limeade for the kids. The tartness of the limes beautifully complements the warm, buttery cheese that oozes out of the taco with each bite.
Poached Apricots
When poaching delicate fruit, such as apricots and peaches, use a large shallow pan so the fruit can be in a single layer, rather than piled on top of each other. Also, keep the fruit submerged in poaching liquid with a round of parchment paper to prevent it from turning brown. After you serve the fruit, mix the poaching liquid with seltzer water to make a refreshing apricot fizz.
Watermelon Sorbet
Because no two batches of fruit have the same sweetness, it’s important to adjust the mix before freezing. This will affect more than flavor because sugar lowers the freezing point of water; so the sweeter your mix, the slushier your sorbet. Too little sugar and the sorbet will be icy hard. Some chefs use a saccharometer (which gauges a liquid’s density by how much of the instrument floats above the surface), but a large uncooked egg stands in quite well (see step 4). Watermelon is one of the simplest flavors to make, since it requires no added water. Follow the amounts in the chart on page 485 to make the suggested flavor variations. When using only juice, you can skip the first step. Citrus fruit can be squeezed by hand. For the kiwi and pineapple sorbets, you will need to add fresh lime or lemon juice along with water in the first step. All liquids should be strained into a deep bowl or plastic container as directed. If desired, add up to 3 tablespoons of other flavorings such as liqueur before adding the simple syrup.
Peach Jam
Peaches are used in this very basic recipe for fruit jam, but you could substitute an equal amount of apricots or plums in their place. Add it to ice cream, or use it to fill a jelly roll cake such as the one on page 464. The jam is quickly made and can be kept refrigerated in an airtight container up to 2 weeks. If you prefer, strain the jam in a fine sieve before storing.
Herbed Rosti with Wild Mushrooms
Rosti is a favorite Swiss potato dish made with grated potatoes and, depending on the cooking technique (deep-frying, pan-frying or even baking), butter, oil, or a combination. It can be formed into one large cake, as in the recipe below, or shaped into smaller patties. The ideal rosti is crisp and light.
Squash Blossoms, Tomato, and Burrata
Our prettiest pizza, this is the one that customers are most likely to point to when they see it being carried through the dining room. The squash blossoms are laid out over the surface so they bake into the crust, and the pizza ends up looking like a painting. We put the burrata on after it comes out of the oven, and I love the cool creamy cheese on the hot, crispy pizza.
Yellow Wax Beans Stracotto in Soffritto with Salsa Verde
I think the heart and soul of Italian cooking is coaxing the true flavor out of raw ingredients, and that’s what we do with these beans. Stracotto means “long cooked,” and for this recipe, yellow wax beans, a summer vegetable usually prepared al dente, are simmered long and slow with our deeply caramelized soffritto. You’ll want to make this dish only if you already have soffritto in your refrigerator and when yellow wax beans are in season. You could also use yellow Romano beans.
Little Gem Lettuce with Summer Squash, Walnuts, and Pecorino
Little Gem lettuce, a smaller, sweeter, very crunchy variety of romaine, appeared recently in Los Angeles the way burrata did: one day nobody had heard of it and now it’s everywhere. Also like burrata, I love it so much that I have found multiple uses for it in my restaurants. The first time I saw Little Gem lettuce was at the Atelier of Joël Robuchon in Paris seven or eight years ago, when I took my daughter Vanessa there for her birthday. A large percentage of Robuchon’s perfectly simple, perfectly executed dishes came with a dressed quarter of this tiny oblong-shaped lettuce with a beautiful, pale green color; I fell in love with Little Gem at first bite.
Strawberry and Fig Jam Crostate with Meyer Lemon Panna Cotta and Saba
It’s impossible to walk into any bakery in Italy without seeing a lattice-covered jam-filled tart called a crostata, so when I penciled out a short list of the desserts I would want to make at Mozza, it was only natural that crostata was on that list. For the longest time, I just couldn’t decide how I wanted to serve it. An unadorned crostata seemed fine for a bakery, but it looked too naked on the plate to serve alone at the Pizzeria. At the same time, I was struggling with how to incorporate another Italian favorite, panna cotta, into our repertoire. Somehow, in the course of all of my experimenting, I got the idea to substitute the creaminess of gelato, the most obvious accompaniment to a fruit tart, with the creaminess of panna cotta, and I put the crostata and panna cotta together. It worked, solving both problems at the same time. We drizzle the panna cotta with saba, Sardinian grape must. What we created was a dessert built of all Italian elements that, though you would never see them together in Italy, somehow work. I’m proud of that. The recipe makes twelve crostate, four more than you will serve with the panna cotta. I based the yield on the number of crostate the dough would make—and I figured you could find someone to eat the extras. You will need twelve 1/2-cup miniature brioche molds to make the panna cotta, though you could use 2-ounce ramekins—your panna cotta will taste just as good, it just won’t look as pretty. The crostata dough is the same as the Pasta Frolla (page 276) with toasted sesame seeds added. Dahlia and I got the idea when she was working on a sesame-seed biscotti. We didn’t like the biscotti enough to include them in our repertoire, but we really liked the subtle flavor and crunch that the seeds added to the dough.
Fried Squash Blossoms with Ricotta
I have never met anyone who doesn’t like these squash blossoms. It would seem like it would be hard to go wrong, considering the combination of deep-fried batter and ricotta cheese, but I find that rarely do restaurants get the filling right. It took us a lot of tries to come up with ours, but luckily Matt and I both knew what we wanted and we both wanted the same thing, which was a light fluffy filling that also had a melting component, which is why we added mozzarella. We dip the blossoms in tempura batter because we like how light and crunchy tempura is. I try not to be brand-specific in my recipes, but in this case we recommend you use Mochiko rice flour, which you can find at conventional grocery stores, and which we think makes for the crispest finished product.
Summer Bagna Cauda
Set out a dish of peppery extra-virgin olive oil with a dash of aged balsamic vinegar, Vincotto (sweet Italian vinegar), or verjus for dipping.
Strawberry-Rhubarb Coffee Cake
The batter for this cake is much like that for a biscuit; the chilled butter is cut in rather than creamed to produce a tender crumb. This recipe was developed by Emily Donahue for Rosey’s Coffee and Tea in Hanover, New Hampshire.
Corn Relish
This colorful relish is delicious with grilled chicken or shrimp. It also pairs well with the piquant flavors of quesadillas and crab cakes.
