Oatmeal Cookies

Until Bob’s Red Mill came up with a totally affordable gluten-free oat, you would never have seen these in the bakery. Thank all that is holy—once again—for Bob’s! Today these cookies are a best seller in both New York and Los Angeles. If you hate raisins (I do . . . sorry, raisins!), try subbing in chocolate chips or dried cherries instead. If you’re some sort of oat maniac, you can dump in as much as another 1/3 cup of oats and be just fine.

Chips Ahoy!

I’m a lady who unabashedly prefers her cookies thin, chewy, and intoxicatingly buttery. If I want a hunk of cake, I go for the cake section. This isn’t to say, however, that the preeminent cookie of my youth was not the mighty and comparatively meaty Chips Ahoy! And not those late-issue, M&M–flecked monstrosities, either. I’m talking the real-deal original flavor, in all their dry and crumbly wonder. This is my version of that wonderfully named cookie.

Granola

Not everyone has time to sit down to a plate of waffles or crepes made from scratch every morning. Before you ask who would even want to do such a thing, I will go ahead and say that I would, actually. But I hear what you’re saying. Granola is a wonderful alternative to a proper sit-down breakfast—a naturally light and easy choice that is as satisfying as any other baked breakfast item. When traveling, I pack this in a little baggie so I don’t starve to death when the flight attendants clink down the aisles offering sodium-soaked chips or dried-up cookies.

Rice Pudding with Lemon Sauce

Rice pudding is an old-fashioned dessert and some might consider it dated. I find it a modern comfort. I adore the way chopped dates flavor the creamy sweetened vanilla-infused rice. A drizzle of lemon sauce over the top updates this old-time favorite.

Kibbeh

Not a designation by the church but a given name, Deacon Pattnotte ran the small grocery market on Grand Avenue in Yazoo City. He smoked meats and sold them sliced by the pound, but one of the most popular items in the store was his kibbeh. A Lebanese meatball of sorts made with ground beef or lamb and cracked wheat flavored with spices, kibbeh is quite a popular dish in the Delta. When making these in quantity, as Deacon did, the basic rule is for each pound of meat you need 1 teaspoon spice, 1 cup bulgur wheat, and 1 grated onion.

Prawns in Dirty Rice

Freshwater prawns farmed in Mississippi are hatched in the nursery and kept in brackish water for three weeks. After that they are moved to fresh artesian well water in the nursery for thirty more days and then are stocked in ponds when the water temperature reaches the mid-sixties. After about four months they have grown large enough to bring to market. When the prawns are harvested in the fall from the artesian waters I always make a batch of this dirty rice. It is Southern through and through and well seasoned.

Pigeon Peas and Rice

I like the browned bits that cling to the skillet, like the socarrat of a paella, when I cook this side dish for my family. I like it so much, in fact, that I serve everyone the fluffy top part and when I’m back in the kitchen I scrape that part off and serve it to myself.

Hominy Salad

Hominy and tomatoes with a South Texas chili spice are a great change from boring potato salad. It is sort of like changing the radio dial from a typical oldies station to a fiesty, fun Mexican one.

Corn Tortillas

The corn tortilla was first made many thousands of years ago. Today it usually begins with masa harina, a powdery meal made from fresh corn dough that has been dried and ground to a powder. Full of sweet and earthy corn flavor, homemade corn tortillas are very different from store-bought. The moment you pull off the lid from the tortilla warmer or the napkin covering a basket of warm tortillas, a sweet, corn aroma fills the air. Serve these with Chili-Rubbed Skirt Steak Tacos (page 102) or in any recipe that calls for corn tortillas.

White Rice

White rice (arroz blanco) is the quintessential Caribbean food and is always a sure choice for a simple side dish that will complement rather than outshine the main course. It’s especially excellent for sopping up the delicious juices from Crock-Pot Cuban Ropa Vieja (page 113).

Broccoli and Rice Casserole

This side dish is as easy to put together as it is tasty; my mom made it for us at least once a week. It packs lots of nutrition and flavor into a single dish, it is a very successful way to get kids to eat broccoli, and it is great to eat with so many things. Try it with Tilapia with Citrus-Garlic Sauce (page 74), Lemon Fried Chicken (page 80), or Meat Loaf (page 115). Any amount of butter works here. I tend to use a lot, but feel free to use less.

Mexican Rice

Also known as Spanish rice, Mexican Rice is very difficult to make well. Once you add the tomato sauce and water, you can’t really touch it or you’ll ruin the texture. The hard part is knowing how much spice to add, because the rice won’t properly absorb any seasoning once the water is absorbed. This makes it nearly impossible to perfect, and once it is done, it is done. There’s a saying in my family: “When you perfect the rice, you are ready to get married. But not until then.” Follow my recipe and your Mexican Rice will be fabulous, too. Include the chicken to serve it as a main course.

Sauteed Broccoli Rabe with Farro, Crushed Red Pepper, and Lemon

Broccoli rabe is one of those vegetables that people either love or hate. An acquired taste, the subtle pungent bitterness of this healthy green fits with any main course. Farro’s nuttiness rounds out this simple and rustic side. It also makes a fine vegetarian dinner.

Cheese Grits

Grits get a bad rap, man. Most of the time grits are watery and served with greasy eggs in a diner. Grits can be so much more! By using good-quality coarsely ground grits and cooking them right, you can easily elevate this Southern staple. Serve with Slow-Roasted Pork Shoulder with Pickled Onions (page 162).

Steamed Mussels with Tomato Harissa Broth and Black Sticky Rice

These are not your typical mussels served in run-of-the-mill white wine broth. The tomato harissa broth is an addictive elixir. Even though the mussels are served with rice, you will want to have plenty of crusty bread on hand to sop up the flavorful goodness.

Greek Farro Salad

I’m crazy about farro’s chewy-grainy goodness; this bright refreshing salad is the perfect complement to Grilled Leg of Lamb (page 163) and also makes a great little vegetarian lunch on its own.

Crispy Polenta Fries with Spicy Ketchup

Golden and crisp on the outside with a moist, creamy interior, these polenta sticks, a modern twist on classic French fries, make a satisfying late-night snack or finger food. Making polenta is not as laborious as some would have you believe. It’s not necessary to stand over the pot for an hour constantly stirring until your arm is falling off. The key to making perfectly cooked polenta is to stir often, running a wooden spoon along the bottom of the pot so the cornmeal doesn’t stick and burn. This is an ideal make-ahead recipe; prepare the polenta in the morning and cut into sticks just before frying. For an outdoor barbecue, try putting the polenta on the grill; it adds a phenomenal smoky flavor. This salsa’ed-up ketchup is perfect to keep in the fridge for four to five days. The polenta fries and ketchup will happily join Michael’s Genuine Burger (page 118).

Turnip Soup with Rosemary and Black Pepper

Carolina Gold rice “grits” from Anson Mills are short, uneven pieces of rice that have been broken during the threshing process. They cook up creamier than long-grain white rice, which can be substituted in this recipe: pulse it in batches in a spice mill or clean coffee grinder for 5 seconds to create the same effect.

Sour Cream Ice Cream with Sorghum

Sorghum is a rich, earthy syrup produced mostly in the South and Midwest from a naturally sweet and juicy grass of the same name. So nutritious that doctors used to recommend a daily dose, it is similar to molasses but a little less sweet and with a deeper flavor.
