Rice & Grains
Zerde
A lovely yellow rice pudding, with the exotic flavor of saffron; interestingly, it’s dairy free. Use cinnamon or cardamom in addition to (or in place of) the rose water (available in small bottles at Middle Eastern stores) if you like.
Steamed Coconut Custard
Palm sugar, or jaggery, is dark, unrefined sugar made from a variety of sources, including the sap of the palm tree. It can be chunky and must be broken up; dark brown sugar is a nearly perfect substitute. This dish is great with slices of ripe fresh mango.
Sweet Sticky Rice with Mangoes
A quicker, easier version of the preceding coconut milk pudding, this simple dessert is popular at food markets throughout Southeast Asia. Great with mangoes or any other ripe tropical fruit.
Basic Long-Grain Rice
How quick-cooking rice came into existence I’ll never know, given how easy this is. Basically, you can cook long-grain rice any way you want to, as long as you use sufficient water and stop the cooking (draining excess water if necessary) before it becomes mush. This is the most straightforward method.
Empanadas
A street snack of Central America and the Caribbean, empanadas can really be filled with anything you have on hand. This recipe and its variations offer several of the traditional fillings. Masa harina can be found at most supermarkets and Latin grocery stores. It adds a nice crunch to the dough, but regular flour works well, too.
Supplì
A Roman treat and a fine use for leftover rice (especially risotto). Formally called supplì al telefono because the stringy mozzarella center stretches when you bite through the center and is reminiscent of telephone wires, this is a snack, or a very informal starter. If you use packaged bread crumbs, make sure they’re unseasoned.
Cig Kofte
Especially when made with lamb, this is incomparably delicious; serve it with good bread or toast. There was a time when this meat was chopped, then pounded and kneaded by hand, for longer than you or I have the patience to do. The food processor makes quick work of the process, and if you buy good fresh meat from a reliable source and handle it carefully, it’s as safe as a rare hamburger.
Stuffed Tomatoes
Italians will stuff anything, but when it comes to a nice summer tomato, this is the recipe. It is good just out of the oven, and delicious at room temperature. Wonderful as an appetizer, a vegetable, and also a main course, this dish is popular at Italian family gatherings and festivities, and it looks great on the buffet table.
Rice Balls
These tasty fried rice balls have been enjoyed in Italy for centuries. They are great when just out of the skillet, but are delicious at room temperature as well. They can be fried in advance, then reheated. At our restaurant Del Posto in New York, the chef sends them out as a palate teaser.
Shrimp and Grits
The shrimp and grits station at our wedding was by far the most appreciated by the guests. The grits were ladled into martini glasses and smothered with succulent wild Georgia shrimp in sauce. Our family and friends lapped up glass after glass!
