Spicy Chicken Soup
Yam Jin Gai
Mom's chicken noodle is great, but this soup is all about heat and bold flavor. Thais typically incorporate soup into a menu rather than making it a separate course.

Spring Vegetable Ragoût
One of the very best things about this stew is its practical nature: If you blanch the vegetables, boil the potatoes, and make the infused broth a day ahead, this dish takes only 15 minutes to cook.
"Cocotte" of Vegetables
Named for the pan in which it is traditionally made, this stew is cooked over high heat in chicken broth and bacon drippings, which are then reduced to a thick sauce

This is a special dish that is only prepared on Mondays. My teacher told me that everyone she knew cooked Espesado on Mondays, a ritual that is universally accepted. In the clean and complete Central Market of Chiclayo, a number of the small eating shops were dispensing this to diners who knew what they wanted and expected it on Mondays.

Herbal Soup
When I was growing up, my mom periodically brewed a pot of this bitter, allegedly medicinal soup and forced me to drink a bowl (she says the ginseng promotes general well-being). Although I used to sit at the kitchen table for an hour, slowly spooning each dreadful bit into my mouth, I've since discovered that the only way to tolerate it is to gulp the liquid down as quickly as possible. Now nearly every time I go home, she prepares this special (and unfortunately simple-to-make) soup just for me — which probably explains why I don't go home very often.
