Pheasant Pie

When making the following dish, start one or two days ahead to allow time for marinating the pheasant and making stock. The extra time involved, much of it unattended, is necessary to develop the rich flavors of this savory pie. For those who want to forgo the pheasant, the pie would also be delicious (and less time-consuming) made with chicken. Substitute 1 pound chicken thighs, 1 1/2 pounds skinless boneless chicken breasts, and chicken broth; marinate the chicken and prepare the pie in the manner outlined below.

Goat Cheese and Leek Galette

With the galette, offer radicchio tossed with black olives, toasted walnuts and a Sherry vinaigrette. Spoon some stewed rhubarb over vanilla ice cream to top off the meal.

Spiced Lamb Pie

Bobotie In the popular South African dish known as bobotie, leftover lamb or beef is minced and combined with bread and spices and baked for awhile before being covered with a custard and baked again. It is generally served in squares or wedges. We have substituted kaffir lime leaves for the lemon leaves called for in the original and used ground meat instead of minced.

Red Onion, Goat Cheese and Basil Tart

Since the crust is made with purchased puff pastry, this delightful savory tart comes together easily.

Spinach and Feta Turnovers

Start this easy Greek-style meal with a refreshing salad of tomatoes, cucumber, chopped red onion and Kalamata olives tossed with olive oil and lemon juice. Drizzle orange sections with ouzo, the Greek anise-flavored liqueur, to wind it up.

Chicken and Vegetable Pot Pies with Cream Cheese Crust

This filling is definitely not peas and hard carrots and tough chunks of chicken. Instead, there are sun-dried tomatoes and shiitake mushrooms with flavorful pieces of thyme-seasoned chicken. And best of all, the individual pies can be assembled a day ahead, leaving only the baking to be done before sharing them with the family.
