Wheat Berry Salad

There are generally two kinds of wheat berries available at natural foods stores: hard (high-protein), which are reddish brown, and soft (low-protein), which are blond. We prefer the chewiness of the hard variety for this recipe. Active time: 15 min Start to finish: 1 1/2 hr

Spicy Indian Orzo

Serve this pilaf-like dish with mango chutney and cold yogurt.

Sweet Corn and Basmati Rice Salad

A Dijon mustard vinaigrette brings all the flavors together. If you can't find basmati rice, white long-grain rice is fine.

Mushroom and Orzo Pilaf

"The recipes here reflect my British roots, but not necessarily my family traditions," writes Mairi Morrison of London, England. "Although my mother is from Scotland and my father is from Northern Ireland, I grew up in Los Angeles, where our weeknight meals were typically American: spaghetti, tacos, and burgers. It wasn't until I moved to Europe that I became really interested in food. Here in London my social life is centered around the table. I really like this dish because it is typically British, and perfect for a rainy winter evening in London." A nice side with lamb, chicken or fish dishes.

Spanish Rice

Of course, I don't believe this dish is Spanish at all, but rather Cajun from Louisiana. I made it quite often in the 1960s. Then — as now — in home cooking, one had to watch the cost, and rice was an inexpensive way to fill out a meal; after all, rice feeds half the world. In most American homes at the time, rice was served buttered with salt and pepper. This recipe gave rice a little style, made it a delicious "fancy" side dish to serve alongside grilled meat or chicken. I always look forward to having any leftovers as a cold salad for lunch the next day. If you like a little added spice, put some hot pepper sauce on the table.

Bulgur Pilaf with Carrot and Scallion

Rice Pilaf with Peas and Pine Nuts

A versatile side dish that goes well with chicken, fish or pork. The recipe doubles or triples easily to feed a family, guests, or to freeze for use another time.
