Condiment
Pineapple Habanero Salsa
For this salsa, we prefer the tang of a regular pineapple — not too ripe and not "extra sweet."

Salsa Ranchera
"When a friend celebrated her birthday at El Teddy's in New York City's TriBeCa, I really enjoyed trying the innovative dishes there," says Thea DeSando of New York, New York. "But the one thing I couldn't get enough of was the salsa—smoky and full of tomato flavor. Is there any way you can get the recipe?"
Roasted Garlic Oil and Roasted Garlic
Few foods metamorphose as dramatically or alluringly as garlic when it is roasted. Hardly a savory recipe exists in which one could not imagine this substance. I always have these garlic preparations on hand.
This recipe is a component of Fish in Foil with Sweet Onions, Tomatoes, and Mojo Verde and Grill-Roasted Rack of Lamb in Red Mole .
Sweetened Red Bean Paste
Canned red bean paste is an acceptable product, but the homemade kind is obviously much tastier. In Chinese markets, you'll find small, plump dried red beans called _hoong dul,_not to be confused with adzuki beans, _zeck siu dul,_also small red beans that are oblong in shape. This recipe makes about 1 1/2 cups of red bean paste, just enough filling for Sesame Balls. Use regular brown sugar for this recipe.
Tapenade
Whether spread on sandwiches or served alongside roasts, this classic Provençal condiment of pummeled olives is always handy and delicious. However, it's during cocktail hour, when served simply with croutons, that people seem to love it best. A food processor replaces the traditional mortar and pestle for faster results. Refrigerate for up to a week.
Peach and Cucumber Salsa
It's hard to believe that this sweet, crunchy, and smoky salsa has only six calories per serving.
Red Wine Barbecue Sauce
This sauce is basted on the meat as it grills. It would also be great served alongside; the recipe doubles easily.
Potted Crab
In manor-house cooking, meat, poultry, and fish were preserved by being "potted" — minced and combined with seasonings, then packed in a container and covered with a layer of fat or butter. The fat was removed before serving, and the contents of the container spread on toasts or crackers.
Winter Fruit Chutney
This cinnamon-and coriander-spiced chutney combines wine, raisins and citrus. Serve with the Barbecue Turkey with Maple-Mustard Glaze, or as an appetizer with goat cheese and crusty bread.
Cranberry-Pineapple Relish
Pack this delicious condiment in decorative glass jars for a nice gift.
Cranberry-Port Conserve
A conserve usually consists of a mixture of fresh fruits, often with raisins, currants or nuts added. New England seafarers prized citrus fruits, which are perfect with native cranberries.
