Rabbit Cacciatore
To most Americans, Ischia, off the coast of Naples, is relatively unknown. That's a shame, because for centuries this island's thermal springs have been luring savvy travelers for restorative dips; plus, the locals produce some of the best wine in the region. At La Pergola, a family-run inn located on a hill just outside of Forio, guests enjoy some of that homemade wine, along with artisanal jams and olive oil. La Pergola also serves one of the island's most popular dishes, rabbit cacciatore, or hunter's rabbit.
Chicken may be substituted for rabbit in this hearty dish.
Wuxi Spareribs
Wuxi, just two hours outside of Shanghai and often referred to as Little Shanghai, is a bustling city known for its silk. It was once called Youxi, meaning "has tin," but the tin reserves were depleted during the Han dynasty, and so Wuxi, which translates as "without tin," became its new name. These spareribs are one of the city's signature dishes.

Our version of chef Brachman's dessert differs from the original only in texture (we opted for a smooth ice cream rather than a kernel-studded one).
Muriel's Chicken Soup with Almond Matzo Balls
This soup, actually my mother's recipe, is traditionally served at Passover, but it's so good that my family likes to make it all year round. A little chicken stock goes into the matzo balls, and the rest makes up the soup base. You can also use canned chicken broth, but for the best-tasting and most authentic soup, we think nothing beats homemade chicken stock.
