A Mussels Soup from Bosa

Zuppa di Cozze Come la Fanno a Bosa Like other coastal towns on Sardinia, Bosa also has an excellent maritime cuisine. An example is this excellent mussels soup. Two ingredients unique to it are the grated sheep's milk cheese that cooks along with the mussels, deepening their flavor, and the bread crumbs—some Sardinian cooks use couscous instead—that add texture and density to the mussel juices.

Braised Bacon, Pomegranate, and Pine Nut Relish

We have a renewed appreciation for the beauty, taste, and health-giving properties of the pomegranate lately, and its molasses (made by cooking the juice down to a sweet-tart syrup) delivers just what we are looking for in an ingredient these days: bold, clear, complex flavor. Used in this go-with for the chops, it brings new meaning to "sweet-and-sour pork." Pomegranate molasses is available at some supermarkets and Middle Eastern markets and by mail from Adriana's Caravan (800-316-0820; adrianascaravan.com).

Pineapple Granita

Pineapple is the international symbol of welcome, and this light dessert is prepared in advance so all you have to do when guests arrive is serve it. I first had it at the beach. It originated with my friend David Mandel, and he's made many variations of it with different fruits.

Chicken Curry with Cashews

In this recipe adapted from Charmaine Solomon's Complete Asian Cookbook, ground cashews thicken the curry and give it a rich, nutty flavor. Both roasted and raw cashews work well, so use whichever you prefer.

Rich Beef Broth with Carrot

Having broth as a tapa is an old custom that's becoming popular again in both Spain and the U.S. Food editor Ruth Cousineau set out to make just the broth, but the resulting short rib meat was so delicious (even after cooking in broth all that time) that she didn't want to waste it, so she came up with a use for it in a short rib terrine. This recipe is traditionally made with oxtails, but we substituted short ribs and beef shanks because they're easier to get in most supermarkets. If you'd like to try it with oxtails instead of ribs and shanks, use 6 pounds of oxtails (preferably from grass-fed beef, such as Niman Ranch).

Tomato Sauce

This quick and easy tomato sauce is the base for two meals: spaghetti marinara and steamed mussels with tomato broth. We call for canned tomatoes because most of the fresh ones available in the wintertime have a bland flavor and mealy texture. Sugar will help round out the flavor if your tomatoes are too acidic. You can also add a pinch of red pepper flakes if you like your sauce to have a bit of heat. The leftover sauce also freezes well for future meals.

Spaghetti With Marinara Sauce

A steaming plate of al dente spaghetti with homemade sauce and a sprinkle of cheese is a guaranteed crowd-pleaser.

Candied Clementine Peel

This is a great way to turn the peel of juiced clementine halves into a delicacy. You can also use peel torn from clementines, though the pieces will be less uniform.

An elegant terrine with pretty layers of walnut praline and homemade white chocolate ice cream. Do-aheads: praline, 3 days; sauce, 1 day; entire terrine, 3 days.

Spiced Cranberry and Dried-Fruit Chutney

Jan Schroeder of Corvallis, Oregon, writes: "A great thing about my job is that I get to do a lot of cooking. I work for the berry industry and one of my duties is developing recipes.
