Sage and Garlic Grilled Tomatoes

Tomatoes are great for grilling. The searing heat caramelizes the tomato's natural sugars. Tomatoes readily absorb the flavors of herbs and other seasonings, and their shocking red color looks terrific on a plate along with grilled poultry, seafood, or beef. The tomatoes can be grilled on any sort of indoor grill—for that matter, you could also smoke them in a stove-top smoker.

Filipino-Style London Broil

Rodolfo Lagua, a thirty-year California barbecue veteran of Filipino heritage, was the inspiration for this recipe. Lagua learned this way of preparing tri-tips from his friend Sammy Ariola, one of the area's first Filipino immigrants. "I have no money for you to inherit," said Ariola, as he lay on his deathbed, "but I'll give you the recipe for my marinade." Since then Lagua has won numerous barbecue contests with his Filipino-style tri-tips, raising thousands of dollars for Filipino community charities. He's now working on bottling the sauce commercially, once again as a fund-raiser. The interplay of salty, sweet, and sour is pure Filipino, and the lemon rind adds an intense blast of citrus flavor. I've adapted my approximation of Lagua's recipe to London broil; in the Tips [below] you'll find instructions for making tri-tips with this marinade. Lagua would serve the meat with boiled rice.

Editor's note: The recipe and introductory text below are from French Women Don't Get Fat by Mireille Guiliano. I didn't much care for fish when I was growing up, but I loved nuts. My mother knew both were essential for good nutrition, so she invented this way of slipping in the fish.

White Fish Stock

You can make this stock with a variety of fish carcasses (from nonoily fish) or with just one type — whatever your seafood market can give you. This recipe makes more stock than you'll need for the fideos with mussels , but leftovers can be frozen and used for soups, stews, and sauces.

Chinese Broccoli with Crabmeat

If Chinese broccoli isn't available in your area, you can substitute regular broccoli.

Braised Rabbit with Grainy Mustard Sauce

If you have difficulty finding rabbit, you can substitute 6 pounds of chicken, cut into 12 serving pieces, with the skin removed from all pieces but wings. Cook as directed below.

Broiled Mackerel with Ginger and Garlic

This mackerel, which pairs well with the fennel endive salad , was inspired by our trips to Southeast Asia, where dishes are commonly served with whole sprigs of fresh herbs for diners to pull off the leaves and eat as desired. Incidentally, this means less chopping for the cook. Also, to save time, we minced the ginger and garlic in a mini food processor.

Chicken Drumsticks with Muhammara Sauce

Muhammara — a toasted walnut, roasted red pepper, and cumin sauce — can also be spread on pita toasts.

Pan-Seared Scallops with Smoked-Tomato Butter and Warm Spinach Salad

This recipe makes more smoked-tomato butter than you need for the scallops — use the leftover butter on steak or fish.

Salmon and Scallop Terrine with Frisée Salad

This update on a classic terrine is made with an aromatic broth and olive oil instead of cream. If you're short on time, don't bother with the leek lining—though it is pretty, the terrine works fine without it.

Frozen Nougat and Chocolate Dessert

Semifreddo al Torrone e Cioccolato The frozen dessert that Italians make at home is usually a semifreddo, which translates literally as half-cold. It comes by its name because a semifreddo always contains some ingredient such as biscuits, candied fruits, nuts, or ricotta that does not freeze solid and hence does not require the freezing power of an ice cream machine. All it needs is an overnight stay in the freezer. The key ingredient in this semifreddo is torrone, the hard Piedmontese nougat bar made from egg whites and almonds that in northern Italy is an inseparable part of any well-stuffed Christmas basket.

Baked Sockeye Salmon with Bell Peppers and Capers

Salmone Sockeye al Forno con Peperoni e Capperi Fresh wild salmon, including the late-season ones from Alaska, would be the best choice for this preparation. What to do when the season ends? Well, there are always available steelhead trout and Arctic char and, of course, farmed Atlantic salmon.

Celery, Avocado, and Bell Pepper Salad with Black Olives

Insalata di Sedano, Avocado, e Peperone con Olive Nere I find the flavors and texture of this salad to be particularly agreeable immediately following a seafood course.
