Flageolets with Autumn Greens and Fresh Bacon

I love flageolets, the immature kidney beans that the French have been cultivating since the 1800s. They come in a variety of colors; I prefer the green ones, which are slightly firmer than a kidney bean, because they have a wonderful flavor and are really elegant in salads and stews. A little fresh bacon goes a long way toward making these beans remarkable. Curing it for a few hours in salt and sugar helps the bacon retain its flavor in the cooking process. For the greens, I like to use kale and mustard greens, but this dish is wonderful with any hearty green like dandelion greens or even cabbage. The pressure cooker helps to cook the beans easily and imparts all the wonderful porky-ness of the bacon.

Stone Fruit Gazpacho with Scallops

Since I've spent so many years eating and cooking in Spain, I would be remiss if I didn't include a gazpacho in this book. But alas, this is not your abuela's gazpacho. In this version, peaches, plums, and watermelon all come together in a bright, colorful, chilled soup that is topped with a single seared diver scallop. The tart sour plums allow the sweet plump scallop to feel a little less self-conscious in its summery dress. If you can't find sour plums, substitute sweet plums, preferably golden plums, plus the juice of 2 lemons.

Rhubarb Coffee Cake

This pink-hued cake is filled with rhubarb, which is in season during the spring and early summer. The cake freezes nicely and has a high ratio of fruit to cake—always good in a brunch sweet. Sliced into wedges, this coffee cake is a nice way to round out a seasonal bread basket of fruit muffins.

Bubby's Granola

This homemade cereal is hearty, wholesome, and filled with nutritious ingredients such as walnuts, rolled oats, raisins, and sunflower seeds. Granola is very flexible, so you can add whatever fruits and nuts are your personal favorites. This granola is great with milk or yogurt, or even as a topping on pancakes. Because raisins can make the granola soggy, we add them right before serving. The granola keeps well for a long time, so this is a big batch—it makes three pounds. Just keep it in an airtight container and eat it for breakfast all week, as we do at Bubby's or cut it in half to feed a smaller crowd.

Orange Ricotta Pancakes

The addition of ricotta cheese gives these citrusy pancakes a little more heft. After you cook each batch of pancakes, transfer them to a heatproof platter and keep them warm for up to 20 minutes in a preheated 200°F oven.

Roasted Asparagus and Leek Frittata

A fine choice for a spring menu, although good whenever you can find fresh asparagus, this frittata has an especially nice flavor because the asparagus and leeks are roasted and caramelized before being added. If you like, roast the vegetables a day ahead of time and refrigerate them until ready to use.

Open-Face Grilled Chicken, Maytag Blue Cheese, and Toasted Pecan Sandwich

Maytag Blue cheese, made by the same family that became world famous for its appliances, is handmade from cow's milk and has a peppery, piquant flavor. Start this sandwich about an hour in advance so the chicken has time to marinate. This is an easy recipe to double or triple for a larger group, and the chicken can be made ahead. I like to serve this sandwich on raisin pumpernickel bread, but feel free to use another favorite loaf.

Charred Green Beans with Lemon Verbena Pesto

If you grow pole beans, you know that at first glance, you have only a few beans, and then suddenly there is an onslaught. That's when bean varieties like the green Blue Lake or the yellow wax beans can be stir-grilled with a bit of olive oil for a very simple yet satisfying dish to use the surplus of beans. When you're in the mood for a more robust sauce, try this lemony pesto tossed with the grilled beans right before serving. Editor's note: If you can't find lemon verbena leaves or even fresh lemon balm leaves, substitute basil pesto.

Skewered Strawberry & Marshmallow S'mores

Backyard garden strawberries are often smaller than store-bought, so be the judge of how many strawberries you need for the skewers. Or even simpler, grill strawberries on a grill rack until a bit charred and warmed through and spoon atop frozen yogurt or ice cream.

Grilled Pork Tenderloin with Fresh Fig Skewers

Fig trees love warmer climates. However, for the adventurous northern gardener, the best way to grow figs is in a container that can be placed outdoors in warm weather and then brought indoors to winter. The best variety of fig tree for a container is the Petite Negri fig. It's a small- to medium-sized black fruit with sweet, red flesh. If you have great weather, Mission figs are superb. The natural sweetness of figs goes well with pork tenderloin in this dish. If you like, use sturdy fresh rosemary branches (as from the Tuscan variety) for the skewers.

Scottish Rabbit Curry

Okay, rabbit is a traditional meat and curry is a classic sauce, but who knew they went together? Of course, in curry-crazy Britain, you shouldn't be surprised. Traditionally, this dish is called a Scottish curry, but it's really just a British rabbit stew with curry added.

Ghiscari Spiced Honeyed Locusts

Strong Belwas will agree that this Ghiscari specialty is of such taste that it is nearly worth dying for. Any dish that so perfectly balances honey sweetness with the savory fire of Free City spices is nothing short of tantalizing, and the preparation of such a meal is an accomplishment to take pride in. Winterfell Black Bread

In the halls of Winterfell, black bread is easy to find. Of course, bread can be found in many lands and nations, but the black bread of the North is fitting for its inhabitants. It possesses a darker color, higher fiber, and stronger flavor than other breads. It's denser as well, implying a great inner strength. Such food seems to symbolize the soul of the Stark family: gritty and stronger than anyone gives them credit for, with hidden resources that emerge when needed. Whether they're braving the Kingsroad during war, fighting beyond the Wall, or foraging in the last days before the long winter, acorn paste can satisfy travelers' hunger. Even children have no problem preparing this food in a moment of need. This spread goes nicely on biscuits and bread—a luxury in the wild. (A Clash of Kings, Chapter 19—Arya)

Beef Tea

Beef "tea?" Is that like beef broth? Well, kind of. It's a dish that goes back in time to the days when the British were trying to find the essence of what gave beef its nutritional value. Since this was before vitamins and protein were known, they weren't sure what they were looking for. Along the way, somebody noticed that this very mild liquid was soothing and comforting. Give it a try when you're feeling under the weather, but don't go looking for a scientific reason for its effectiveness. For steeping the "tea," you will need a 1-quart wide-mouth glass jar or plastic container with a tight-fitting lid.
