Peanut Butter Cream Tart

Every small town in Georgia seems to have its own peanut-dessert specialty for the holidays. This one features a creamy no-bake peanut butter filling in a crisp chocolate-crumb crust.

Tomato Ginger Jam

This recipe is an accompaniment for Miniature Crab Cakes with Tomato Ginger Jam . Active time: 30 min Start to finish: 1 hr

Apple and Dried Cranberry Pie

The cranberries add tartness, color and texture. Serve the pie with vanilla ice cream or sweetened whipped cream, if you like.

Brown Sugar-Chocolate Fudge

The fudge can be cut into three wide bars. Wrap each in cellophane and tie with ribbon, adding a butter knife to the bow.

Creamy Roasted Mushroom Soup

Big chunks of portobello and shiitake mushrooms make for a hearty soup.

Southwestern Pumpkin Soup

"The Watermark restaurant here in Cleveland is my favorite place to take out-of-town guests—and I find other excuses to go, too," writes Bob Charleton of Cleveland, Ohio. " Last time I went there, I had lunch in the Garden Room, a glassed-in space overlooking the Cuyahoga River. The highlight of the meal was an unusual pumpkin soup topped with cheddar cheese." Surprisingly easy to make, this soup is flavored with cumin and chili powder.

Celery Victor

This is a light and elegant update of the San Francisco original that was invented at the Hotel St. Francis by chef Victor Hirtzler. Though it is often served topped with anchovies, we love the way it tastes without them. Active time: 15 min Start to finish: 2 1/2 hr

Sorrel-Wrapped Goat Cheese and Beet Stacks

If you can't get sorrel at your local market, arugula leaves or large basil leaves are a good alternative.

Green Goddess Dressing

Here's a tangy dressing that is great on sliced tomatoes, mixed greens, hard-boiled eggs, or cold steamed potatoes.

Sour Cherry Preserves

I love these preserves because they're both tart and sweet. For the best color, choose true-red sour cherries. Darker varieties — those that resemble Bing cherries — will make darker preserves, which will also be delicious. The cherries are steeped overnight in sugar, which deepens their flavor and helps them to stay plump. Kernels from the cherry pits (tied in a cheesecloth bag) add an almondy note to the preserves. Active time: 2 1/4 hr Start to finish: 1 day (plus 1 day for flavors to develop)

Raspberry Swirl Cookies

When freshly baked, these appealing cookies are chewy, crisp, and tender all at the same time. If stored in an airtight container for a day, they are still delicious, only softer.

Porcini Mushroom Sauce

Also delicious with steaks or roast chicken.

Brussels Sprouts with Marjoram and Pine Nuts

Think you don't like brussels sprouts? Think again: These are pretty irresistible.
