Caramelized and Spiced Nuts

These fancy flavored nuts require almost no effort. Prepare 'em in advance, store 'em in a well-sealed container, and when the time is right, let your salads, desserts, and cheese plates go nuts with sugar or spice or both. To only "caramelize" the nuts, skip the cayenne and black pepper, which make them "spiced."

Minted Cranberry-Lime Sparkletinis

I adore this cocktail recipe because it's refreshing, pretty, and has subtly mint and cucumber flavors that will keep everyone guessing at exactly what's in it. You can dress it up for an evening fete by straining it and serving it up with edible gold or silver flecks as it is done here, or dress it down by throwing everything — mint, cucumber slices, and all — into a serving pitcher. Best of all, you can skip squeezing limes all day by using limeade concentrate. Shhhh. It'll be our secret.

Frozen Grand Marnier Torte with Dark Chocolate Crust and Spiced Cranberries
This easy dessert has it all: chocolate cookie crust; rich, creamy filling; and a glistening tumble of berries on top.
Shrimp, Chicken, and Andouille Gumbo
A cook's dream: The base is made ahead, and the shrimp are added at the last minute. Best of all, the gumbo tastes even better the second day.

Leek and Walnut Fritters
Make the fritters a day ahead, then fry them quickly before serving. What to drink: A crisp white with citrus and herb flavors would be perfect; try the Jim Barry 2006 "Silly Mid On" Sauvignon Blanc and Sémillon blend (Australia, $17).
Trio of Mini Pound Cakes
These tiny cakes make terrific gifts, packaged in sets of three — one of each flavor. The basic vanilla batter is also wonderful for other variations — try orange rind and white chocolate-chip, raisin-walnut, or "the kitchen sink" (that's whatever you need to get rid of in your pantry). I also like to keep some of these loaves in my freezer for impromptu breakfast parties. Just move them to the refrigerator before bed, and they'll be thawed by morning.

Panettone with Candied Fruit
This is an all-day project, but it's worth the work. The repeated risings give the yeast time to add extra flavor and moisture, a difference you'll definitely taste in the finished product. The recipe will make two large loaves, perfect for holiday entertaining, or eight small ones, great for gift-giving. Well wrapped, they'll keep for days, and slightly stale leftovers can be turned into delicious into French toast.

Tomato Chile Salsa
Broiling tomatoes and onions concentrates their flavor in this spicy salsa that's good any time of the year.
Tamari Almonds
A touch of sugar blended with tamari creates a rich, salty coating for whole almonds. They're ideal for holiday parties — just set them out in festive dishes and watch them disappear.
Tea-and-Honey Crisps
These buttery, crisp tuiles are made with tea and honey — the Earl Grey lends a sophisticated note of bergamot — and taste wonderful with an afternoon cuppa.
Star-Fruit Chips
Wonderfully festive and fun, these candied star-shaped chips — a favorite among children — have a slight tropical flavor that makes them a sunny treat with or without the strudel.
Turkey Broth
This yields enough broth for the gravy and the stuffing . Use heavy large rimmed baking sheets; regular ones may buckle.
Rutabaga Purée with Cardamom and Thyme
Related to the turnip, rutabagas are slightly sweet, and their flesh has an orangey hue.
