Tuscan Tuna and Beans

Preserved tuna, packed in extra-virgin olive oil, is paired with white beans in Tuscany, a speedy dish to assemble if you've got beans on hand. Canned beans work well and simplify this preparation — open a few cans and chop an onion. Quality tuna makes a big difference in the success of this dish. Leftover grilled or poached tuna can be used instead of canned, but it should be marinated in extra-virgin olive oil. All choices will work better than insipid tuna packed in water. Scallions can be used in the spring, red onions for the rest of the year. Torquato, my farmer and muse, suggested combining green beans with tuna during his glorious green-bean season, a fantastic variation.

Sour Orange, Red Onion, and Parsley Mojo

This recipe differs slightly from classic mojo in that it uses red onion instead of garlic. It's best to make this mojo a bit ahead of time so that the color of the red onion "bleeds" into the sour orange. The traditional accompaniment is grilled pork, but it's also wonderful with well-roasted chicken — charring its skin brings out the full flavors of the mojo.

Posole with Bacon

When stewed, the dried corn kernels sold as "posole" or "hominy" expand and become tender. At Cafe San Estevan, in Santa Fe, New Mexico, chef Esteven Garcia makes posole as a mild, brothy side dish, unlike the heartier and spicier stew type.

Cranberry and Pickled Beet Relish

This super easy relish stays on the savory side. It makes a wonderful accompaniment to poultry, beef, or game.

Rutabagas with Caramelized Onions

Root vegetables are always for sale at the Central Market in Lancaster, but are especially nice this time of year. Rutabagas have a distinctive bitterness that makes them good with rich meats like pork. Tamed by the onions and honey, these rutabagas are a terrific side dish.

Evan's Champagne Julep

A light, fizzy take on the classic Mint Julep.

Sweet Mango Lassi

Aam Lassi I guarantee that even if you think you don't like yogurt you will love this shake. Combined with mangoes and blended until frothy, lassi is always refreshing, not just at mealtime. The bubbly froth subsides when lassi stands awhile, so whip it again in the blender or whisk it just before serving.

White Horseradish Sauce

Fresh horseradish can have very intense flavor and heat, which is why we start with a small amount — taste the sauce and add more only if desired.

Warm Cherry Tomato Salad

Can be prepared in 45 minutes or less.

Romaine Salad with Parmesan Dressing
