5 cups 3/4- to 1-inch cubes seeded watermelon
1 cup chopped green onions
3 tablespoons chopped fresh mint
3 tablespoons chopped fresh Italian parsley
1 1/2 tablespoons finely chopped seeded deveined jalapeño chiles
1/4 cup olive oil
2 tablespoons Champagne vinegar
