Tongue

Ingredients

Preparation

  1. Bland

    Step 1

There’s not a whole lot you can do with a bland tongue, but you might add four or five whole allspice berries and/or some celery to the cooking water next time. This time, know that tongue marries well with mustard (stone-ground is nice), horseradish, tomato-based sauces, sautéed onions, and sauerkraut, among other things.

  2. Difficult to peel

    Step 2

Add 1 tablespoon vinegar to the cooking water and cook for an additional 10 minutes. Peel while the tongue is hot.
