Salt-and-Herb–Roasted New Potatoes

Ingredients

2 pounds red new potatoes
1/4 cup extra-virgin olive oil
1 tablespoon fresh rosemary needles
Leaves from 1/4 bunch fresh thyme
1/4 cup sea salt

Preparation

  1. Preheat the oven to 375°F. Toss everything together in a large bowl. Dump the herbed potatoes on a baking sheet and spread them out in a single layer. Pour any remaining oil on top. Bake for 30 to 40 minutes, until the potatoes are cooked through and crispy around the edges.
