Reduced-Fat Herb Vinaigrette

Ingredients

1 tablespoon fresh lemon juice
2 teaspoons Dijon mustard
1/4 cup firmly packed fresh herbs (such as basil, cilantro, or parsley)
1/2 small garlic clove
Coarse salt and fresh ground pepper
3 tablespoons extra-virgin olive oil

Preparation

  1. In a blender, combine the lemon juice, mustard, herbs, garlic, and 1/4 cup cold water; season with salt and pepper. Purée until smooth. With the motor running, add the olive oil in a steady stream until emulsified.
