    If your pot roast really looks too fatty to be acceptable, cook it well, chill it in the refrigerator, remove the now-solidified fat, and return it to the pot, or wherever it was.

If you don’t have 3 hours to simmer the roast, slice it very thin, put it back in the pot for 15 minutes, and then serve.
