I do not think that pêches de vigne, French red-fleshed peaches, are available in the United States so, for this recipe, use the most ripe, fragrant peaches you can, and go easy on the orange flower water. Slice, drizzle and serve the peaches immediately, so they are still lightly chilled!

1-1/2 pounds lightly chilled peaches, skinned and pitted
2 to 3 teaspoons orange flower water
Mint springs for garnish

Preparation

    Slice the peaches into one-quarter inch thick slices and arrange them nicely in a shallow serving dish.

    Drizzle them with orange flower water, and garnish with the mint sprigs. Serve immediately.
