Fresh Corn Soup

Ingredients

For Each Cup of Cooked Corn Kernels

1 tablespoon butter
2 tablespoons chopped onion
1 tablespoon flour
1 cup milk
Salt, pepper, and nutmeg

Preparation

  1. Melt the butter in a heavy saucepan over medium heat. Add the onion and flour, and cook for 3 minutes, stirring constantly. Warm the milk in another pot (to avoid lumps later). Stir the corn into the onion mixture and then add the milk. Warm the mixture thoroughly, but do not boil. Season to taste with salt and pepper. Serve with a tiny sprinkling of nutmeg.
