Besto Pesto Burger

These are an excellent choice for late summer when fresh tomatoes are at their besto.

Ingredients

6 thick, juicy Cheater Kitchen Burgers (page 119)

For the Besto Pesto Sauce

1/2 cup mayonnaise
1/4 cup prepared pesto
2 tablespoons Dijon mustard

For Serving

6 slices Italian bread, toasted
6 slices fresh mozzarella cheese
6 slices ripe tomato
Fresh basil leaves (optional)

Preparation

  1. Step 1

    COOK the burgers.

    Step 2

    COMBINE the mayonnaise, pesto, and mustard in a small bowl.

    Step 3

    PLACE the warm burgers on the toasted bread.

    Step 4

    SPREAD each burger with the Besto Pesto Sauce and top with a slice of cheese and tomato. Dollop each with additional sauce and garnish with a basil leaf, if you want.
