Strawberry Rhubarb Pie with Ginger Crumb Topping
The combination of strawberry and rhubarb is a classic for good reason: the juicy-sweet strawberries are perfectly balanced by the tart rhubarb. Our version features a crumb crust on top, which works well with a very juicy fruit filling such as this one; a traditional pie crust topping would get soggy. The crumb also provides crunchy textural contrast to the soft fruit inside.
Blood Orange Granita
Because of its seductive red color, this granita is the sexiest slushy on earth. It’s incredibly easy to make and requires the simplest of equipment. To take it over the top, serve with whipped cream or, for that Creamsicle effect, with a scoop of vanilla ice cream. If blood oranges are not available, you can also use ruby grapefruit, Valencia oranges, pomelos, or Meyer lemons. Tarter citruses will require additional sugar, so taste a bit of the mixture before you freeze it.
Summer Corn and Tomato Salad
This colorful and refreshing salad is one of the most eagerly anticipated items in our deli case. We don’t start making it until the tomatoes are really ripe and the corn is sweet and abundant. Because the ingredients are fairly sturdy, this salad holds up for quite a while after you make it. It’s a great candidate for bringing to a picnic or barbecue, and it’s the perfect side for a burger! It’s also nice as a salsa or spooned onto a grilled fish fillet.
Crème Fraîche Sorbet
Lighter than a custard-based ice cream, Chef Rob Wilson’s sorbet makes a refreshing accompaniment to summer berries, grilled peaches, or baked fruit desserts. Or scoop the sorbet into compote dishes and accompany with his Chocolate Sea Salt Cookies (page 185).
Peach Crisp with Crystallized Ginger and Pecans
Florida chef Oliver Saucy, who attended the 1995 Workshop, tosses the peaches in his fruit crisp with crystallized ginger—a nice touch. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. Tapioca flour thickens the peach juices without making them cloudy or imparting a floury taste. If you can’t find it, purchase pearl tapioca and grind it fine in a spice mill or coffee grinder.
Rose Petal and Sparkling Wine Sorbet
Napa spice merchant Shuli Madmone has introduced many fascinating seasonings to our kitchen, including the dried rose petals we use in this sorbet. His shop, Whole Spice (see page 126), is a playground for adventuresome cooks, and in recent years, he has brought a collection of exotic seasonings to the Workshop. We grind the dried rose petals fine with sugar, then use that fragrant mixture to sweeten a sparkling wine sorbet.
Balsamic Ice Cream with Fresh Cherry Sauce
If you have never dreamed of putting vinegar in ice cream and can’t imagine what it would taste like, don’t summarily dismiss the idea. Balsamic vinegar, reduced to a syrup, gives ice cream a pale plum color and a caramel note. If you can’t get fresh cherries, serve the ice cream with sugared strawberries or baked figs. Accompany with biscotti or another crisp cookie.
Braised Summer Vegetables with Basil Broth and Vella Cheese Crisps
Like most of the chefs we take to visit Forni-Brown Gardens (see page 164) in Calistoga, Rocco di Spirito was overwhelmed by the bounty. This farm grows impeccable lettuces, tomatoes, herbs, and other produce for some of the most discriminating restaurants in Napa Valley. For his astonishing first course at the 2000 Workshop, Rocco used Forni-Brown beets, baby carrots, tiny tomatoes, and three kinds of basil. This aromatic stovetop braise is an adaptation of the more elaborate dish he made.
Summer Vegetable Stew with Oregano and Chiles
A spicy vegetable side dish from Chef Jon Mortimer, a 2007 Workshop participant, inspired this more substantial stew. By adding more summer vegetables, such as chayote and corn, Brian elevated Chef Mortimer’s dish to entrée status. Prepared with vegetable stock, it is suitable for vegetarians.
Mediterranean Summer Vegetable Gratin
Adapted from a recipe from chef Gary Danko, who participated in the 1994 Workshop, this gratin relies on bread crumbs sprinkled between the vegetable layers to absorb the savory juices. After the gratin cools and settles, you can slice it like a cake and the layers will hold together. All the flavors that suggest a Provençal summer are gathered here—garlic and basil, tomato, fennel, and thyme. Serve the gratin with roast or grilled lamb or a store-bought spit-roasted chicken. Because it tastes best warm or at room temperature, you can bake it before dinner guests arrive.
Summer Bean Stew with Pancetta
With names like Good Mother Stallard, Goat’s Eye, and Yellow Indian Woman, the dried heirloom beans from Rancho Gordo (see page 55) charm diners familiar with only generic dried beans. Rancho Gordo proprietor Steve Sando finds some of these intriguing beans in Mexico and Central America and arranges to buy them direct from the farmers. Others are grown on farms in Northern California. You can use a single bean type for this dish, but Brian prefers to use multiple varieties, simmering them separately to accommodate their different cooking times. Just before serving, he unites them with a tomato sauce and some blanched fresh yellow and green beans. You could make a meal of this summer stew with a green salad and some crusty bread, or serve it as an accompaniment to grilled lamb. Note that the beans must soak overnight.
Grilled Bone-In Ribeye Steak with Garlic Sauce
Pureed garlic—and lots of it—gives body to the sauce for these steaks. The whole cloves are blanched multiple times to mute their pungency, then simmered in milk until they are as soft as butter. Pureed until smooth, the finished sauce looks rich with cream, yet it doesn’t have a drop. It would be tasty with grilled leg of lamb, too. Steeping the cloves in hot water first makes them easy to peel, a handy restaurant technique. Accompany the steaks with Roasted Mushrooms and Baby Artichokes (page 155) in spring or fall, and with Blistered Cherry Tomatoes (page 157) in summer.
Grilled Leg of Lamb with Chimichurri
Eduardo Pria, a 2002 Workshop participant and Mexico City native, is probably the most passionate chef we have ever had at the Workshop. He was overjoyed to be at the winery and expressed it with frequent hugs for all, usually coupled with an enthusiastic “I love you, man!” The Argentinian chimichurri sauce that Eduardo made for Don Watson’s lamb was as exhilarating as he is. Brian has used the sauce frequently over the years, adapting it along the way. Prepared quickly in a blender, it is a vivid emerald green and like pesto in texture, with a fresh, zingy taste. It complements almost any grilled red meat—from leg of lamb to hanger steaks, flatiron steaks, or pork chops. Add roasted fingerling potatoes and Blistered Cherry Tomatoes (page 157) for an ideal summer meal. We also like chimichurri with grilled summer vegetables, such as zucchini, eggplant, and peppers. You can make the sauce a few hours ahead, but plan to use it the same day. It loses zip with time. Note that the lamb needs to marinate for at least two hours.
Grilled Mahimahi with Preserved Lemon Butter
After a few weeks in a brine of salt and lemon juice, lemons develop an appetizing, lightly pickled taste. Brian makes Moroccan-style preserved lemons at the winery and keeps a stash on hand to use in recipes like this one. The seasoned butter would complement swordfish, sole, shrimp, or salmon, or you could dollop it on steamed mussels or clams. For this dish, Brian slathers the butter on the grilled fish served over Frank Stitt’s Field Pea and Corn Salad (page 64), but wilted spinach would be an appealing accompaniment, too.
Grilled Pizza with Summer Squash, Cherry Tomatoes, and Fresh Mozzarella
It takes a little more attention to grill a pizza than to bake one, but the smoky touch of the grill is appealing—the next best thing to baking in a wood-fired oven. When Brian teaches pizza classes at the winery in summer, he demonstrates the grilling technique because so few people have a wood oven at home. The trick is to start the pizza crust in a hot zone to set it, and then flip it and move it to a cooler zone to add the topping and finish cooking. This topping is vegetarian, but you could add some crumbled sausage or pancetta, if you like.
Grilled Summer Vegetable Sandwich with Romesco Sauce and Serrano Ham
Save this pressed sandwich for the height of summer, when you can get locally grown zucchini, eggplant, and tomatoes. After grilling the zucchini and eggplant, layer them on a roll slathered with romesco, the Spanish tomato and almond sauce. (Refrigerate any unused romesco and use it within a day or two on another sandwich or with grilled fish or shrimp.) The sandwich can be made hours ahead, so it’s a good choice for a backpack lunch or a picnic. Omit the ham to make it vegetarian. Piquillo peppers are small, slightly spicy roasted red peppers sold in jars at shops that specialize in Spanish or Mediterranean foods (see Ingredient Resources, page 193).
Squash Blossom Soup with Corn and Poblano Chiles
Chef Scott Neuman is a Latin cooking enthusiast who transformed the zucchini and corn in Dolores’s garden into a lively chile-spiked soup during the 2009 Workshop. This recipe is an adaptation that goes well with Cakebread Cellars Chardonnay. The soup is light and bright, a distillation of early summer flavors and a delightful first course in warm weather.
Grilled Chicken Salad with Cherry Tomatoes, Avocado, and Tahini Dressing
If you have ever made hummus, you probably still have a partial jar of tahini in your refrigerator. Here’s one way to use more of it: in a creamy dressing for a grilled chicken salad. Brian seasons the chicken with za’atar, a Middle Eastern seasoning, and balances the tahini’s faint bitterness with the sweetness of pine nuts to make the dish more wine friendly. You could substitute a meaty fish, such as mahimahi or tuna, for the chicken. That jar of tahini will be empty in no time. Note that the chicken needs to marinate for at least two hours.
Field Pea and Corn Salad
When Southerners like Birmingham chef Frank Stitt talk about field peas, they mean small shelling beans, such as black-eyed peas. (Crowder peas and lady peas also qualify, but they’re less common.) When field peas are fresh, in summer, Chef Stitt, a 1999 Workshop attendee, shows them off in this salad, tossing them with grilled corn cut from the cob, tomato, grilled red onion, and herbs. Serve the salad when you’re also grilling salmon, sausages, or pork chops, or with Brian’s Grilled Mahimahi with Preserved Lemon Butter (page 113). If you can’t find fresh black-eyed peas, use dried ones, soaked overnight, then simmered gently until tender.
Cucumber Cups with Roasted Beets and Yogurt Dressing
The beets and cucumbers in Dolores’s summer garden and the tangy goat’s-milk yogurt from Skyhill Farms, a Napa Valley producer, inspired chef William Withrow at the 2005 Workshop. He folded diced roasted beets into yogurt, then spooned the mixture into edible “cups” made from cucumber chunks. When all of the ingredients are well chilled, this healthful appetizer is incomparably refreshing—just what you want on a warm summer night.
