Charred Eggplant and Polenta Torta

I love the smoky flavor of eggplants charred on the stovetop. A “quick and dirty” technique used in restaurants, cooking eggplants on an open flame gets a little messy, but it’s fast. This savory pie is made with traditional Italian ingredients and brightened with fresh herbs. Slice it into wedges and serve as a main course, or cut it into small squares for an appetizer. Serve with a simple green salad and fresh bread.

Roasted Tomato and Goat Cheese Soup

In this recipe, pungent tomatoes are balanced by goat cheese for a rich fall soup. Goat cheese can seem pricey because, unlike cows, goats roam instead of graze in one spot. Due to their independent nature, goats can’t be put into factory farms, which are cheap for farmers but hard on the environment. Most goat farms are small, family-run, and often highly sustainable operations. Find out about your local goat farm’s practices and use their cheese in recipes like this, where a little goes a long way.

Grilled Squid

Grilled squid, the Japanese version of fried calamari, is extremely popular in Japan’s neighborhood izakaya, or eating pubs. Whenever I order this dish I always think of my mother, who once warned me against eating squid from street vendors. My mom, always looking out for me! Using nice, fresh squid, this dish is simple to prepare and perfect with a cold glass of sake. Try to buy the largest calamari-style squid you can find.

Spaghetti with Razor Clams, Seaweed, and Tomato-Basil Sauce

This dish brings back memories of my childhood. I grew up only ten miles from the coast, and spent many Sunday mornings with my friends on the beach digging for clams, which we’d bring home to cook. I love the dense, chewy texture of razor clams, but if they’re not available, other clams work great with this recipe, too, including Manila, Asari, and littleneck.

Angel Hair Pasta with Steamed Chicken

The secret to this cool, summertime dish? Steaming the chicken. When you steam chicken, it stays moist and juicy even if you serve it cold. And caramelizing the skin beforehand adds lots of wonderful flavor. These are both techniques I borrow from Chinese cuisine. The angel hair pasta in this dish plays the same role as somen noodles: not too chewy or overwhelming when enjoyed cold.

Grilled Pork with Green Papaya Salad and Rice Noodles

This Southeast Asian–influenced dish is perfect for summer dining: it is light and refreshing, with tangy sweet-and-sour flavors. I love green papaya, an ingredient that has an appealing crunch and natural sweetness. Lemongrass, another one of my favorite Southeast Asian ingredients, adds a wonderful lemony fragrance. I cook with both at my restaurant.

Curry Shrimp Rice Noodles

I tasted an unforgettable version of this dish on a trip to Thailand a few years ago, in the city of Chiang Mai, which is famous for its vibrant Thai curries. I love the mixture of aromatic flavors and textures here, and the way this dish is sweet, pungent, and spicy all at once. If you can find them, use Thai eggplants, which are a pale green in color, and have a nice, delicate flavor. Or you can substitute slender Chinese eggplants. This dish has a lot of ingredients but is very straightforward and easy to prepare.

Chilled Seafood Somen

Here is an elegant summertime recipe that you can pull together quickly, with minimum time at the stove. You can use fresh or canned crabmeat, and fresh or frozen shrimp and squid. My local supermarket sells frozen squid that has already been cleaned, which is what I use when I cook this dish at home. The sweetness of the seafood in this recipe pairs nicely with the tomato dipping sauce, while the arugula adds a nice contrasting zing.

Grilled Salmon and Chilled Somen with Yuzu Sauce

The daikon and cucumber in this recipe are perfect for summertime: cooling, crunchy, and fresh tasting. The mitsuba, an herb that has a wonderful, delicate flavor that’s a bit like chervil, adds another refreshing note and doesn’t overpower. Add tangy yuzu and rich salmon and you have a balanced, nutritious, and delicious dish you can knock out in 15 minutes, from start to finish. If you’d like, you can substitute canned salmon for the fillets and avoid firing up the oven altogether.

Chilled Inaniwa Udon with Heirloom Tomatoes and Ratatouille

Save this dish for late summer, when tomatoes and vegetables are at their peak of flavor. Use a variety of heirloom tomatoes, especially ones with different colors, which will make for an eye-catching presentation. Inaniwa udon is a noodle that originated in Japan’s rugged far north. Unlike typical udon noodles, which look like thick spaghetti, inaniwa is shaped like linguine and tastes great chilled.

Tororo Soba

This summer recipe centers on a versatile ingredient that’s beloved in Japan but almost unknown here, one that I know you’ll enjoy. It’s called yamaimo, or mountain yam. This root has a nice, fresh taste, with a delicately sweet, nutty flavor and lots of umami, or sense of savoriness. The most popular variety, which you can find in Asian markets, looks like a tan-colored baton. Peel the skin and grate its white flesh. Raw yamaimo has a liquidy, slippery texture that might take getting used to, but it pairs beautifully with the toothsome soba in this dish. I’ve also added okra, a cooling Southern favorite that’s very popular in Japan.

Tempura Shrimp-Stuffed Zucchini Blossoms with Soba

Zucchini blossoms are an ingredient that always catches my eye in the early summertime, especially at the farmers’ markets here in my hometown of Chicago. They inspired me to come up with this recipe, my own interpretation of the classic stuffed zucchini blossoms of both Italian and Japanese cuisines. In this dish, I stuff the flowers with onion and shrimp, then fry them as tempura, a combination of flavors and textures that complements the toothsome soba.

Seaweed, Avocado, and Hearts of Palm Noodle Salad

Call this my Japanese-inspired take on cobb salad, except that it’s all vegetarian. It’s a perfect dish for summertime eating. I love sweet and crispy hearts of palm, which are native to Latin America. Try to buy them fresh, if possible, but canned works fine, too. The umeboshi-yuzu vinaigrette lends the vegetables an irresistible tangy and citrusy flavor. Ramen noodles served chilled are springy, chewy, and absolutely delicious.

Chilled Ramen with Chicken and Banbanji Sauce

Banbanji is a Chinese-inspired spicy sesame sauce that pairs wonderfully with chilled ramen noodles, a perfect summertime dish. Instead of grilling the chicken in this recipe, which is typical for cold dishes, you sear the skin side, then steam in sake. This results in crispy skin but incredibly moist chicken with a hint of sake flavor. With this technique, the chicken will always remain juicy and tender, even after you cool it. You can store the banbanji sauce in your refrigerator or freezer and use it over and over.

Chilled Crab and Shrimp Ramen Salad with Chukka-Soba Dressing

When these noodles appear on restaurant menus in Japan, it heralds just one thing: the arrival of summer. This ramen is a classic warm-weather dish, popular from June until September. Chukka means “Chinese,” a reference to the origins of ramen noodles. And it’s not just a restaurant dish—when I was growing up, my mother loved to prepare this for our family.

Meme’s Pear Chow-Chow

A Southern tradition, chow-chow is a spicy, pickled fruit-and-vegetable relish that utilizes the produce at the end of the harvest. The fruit and vegetables can vary from recipe to recipe, and can include green tomatoes, sweet peppers, onions, cabbage, carrots, and cucumber. Since Meme and Dede had a pear tree in their yard, they made chow-chow with pears. When I called Aunt Louise to ask for this recipe, she started reciting, “A peck of pears, peeled, cored, and sliced.” I laughed. Members of my family teasingly offer loving sentiments accompanied by the phrase, “A bushel and a peck, and a hug around the neck.” But that is pretty much the extent of my definitive knowledge about a peck. However, a peck is an actual measurement: one-fourth of a bushel, which is about fifty pounds, depending on what is being measured. Bushel and peck baskets made of curved wooden slats with thin wire handles are still seen at farmer’s markets and farm stands all across the South.

Pickled Peaches

Dede loved pickled peaches and all manner of preserves. Every year, there was a garden of fruits and vegetables. In the summer, my family would put up quart upon quart of green beans, peaches, and canned tomatoes, and in the fall, golden pears in syrup and muscadine preserves. He’d seal the lids tightly with his strong hands and place them in rows on shelves in the basement. The name of this recipe reminds me of the tongue twister, “Peter Piper picked a peck of pickled peppers.” Dede would often recite similar silly phrases, play word games, and come up with whimsical names for foods: “cat head” was a large biscuit. “Wasp’s nest” was loaf bread. “Floppy motus” was gravy. And Jell-O was appropriately called “nervous pudding.”

Georgia Peach Soufflés

Each summer, any peaches that were not eaten, jellied, or canned were frozen. We would peel and slice the peaches and pack them into sealable plastic freezer bags. Most often, they later appeared as a topping for Meme’s Pound Cake (page 266). For a child, peach season was purgatory—it was so very hot—but I am sure Meme is smiling in heaven with satisfaction when she sees me practicing now what she taught me then. This soufflé uses the meringue method to rise, and the flavor is delicate and light. Frozen peaches may be used when peaches are not in season; simply defrost them before using.

Sabayon with Seasonal Berries

Sabayon is the French name for zabaglione, a light foamy Italian dessert. It is served warm in glasses or coupes or spooned over a dessert, fruit, or pastry as a topping. Traditionally, it is made with Marsala or port, but it may be prepared using other wines and liqueurs. Use the freshest berries in season. Try all the same berry, or mix them up for a colorful treat.

Gazpacho with Tarragon Crème Fraîche

Gazpacho is essentially a liquid salad. It’s best prepared at the height of summer, using fresh, local ingredients—I always use Georgia-grown vegetables when I make this gazpacho. The key is to use the proper amount of salt to draw out the moisture and flavor of the vegetables. There is nothing so simple, yet so vitally essential to cooking, as salt. Without salt even the most elaborate dish would be lifeless and dull. I remember staring incredulously as my chef in culinary school would toss what seemed to be handfuls of salt into food. Now I giggle when my students stare at me when I do the same!
