Slow-Cooked Summer Tomato Sauce

About half the tomato plants I put in our garden beds each summer are plum tomatoes, mainly Italian varieties but also some of the old-fashioned American “heirlooms” that are being revived. Of course, New York is not Naples, and our San Marzano and Roma tomatoes don’t absorb the intense sunlight that they would in Italy, but with my mother’s careful tending (and the kids’ attention too), the plants are prolific and the tomatoes big and sweet. When they ripen—by the bushel, it seems—we make these sauces, one with just tomatoes and the other with tomatoes and eggplant. They are simple sauces, mostly the primary vegetables and big “bouquets” of fresh-cut basil branches (and olive oil, onion, garlic, and peperoncino, naturally). Yet they have a freshness and intensity that are distinct from any sauce made with canned tomatoes, even the finest San Marzano tomatoes. We make both of these in large quantities, in part because the plants are so productive (and Grandma won’t let anything go to waste), but mostly because they are so delicious and versatile. I put them on pasta, eggs, meats, and other vegetables. They are key components in some of my favorite summer creations, including the vegetable lasagna and skillet gratinate that you will find elsewhere in this chapter. And I freeze as much of both sauces as I can—they keep for months and retain their fresh, summery flavor. It’s a joy to cook with them in December or January!

Grilled Corn and Figs with Balsamic Reduction

You probably have enjoyed grilled corn; you may or may not have tasted a grilled fresh fig. I’m almost sure, however, that you never had them together in one dish. But when late summer brings them to market at the same time, I hope you will try this recipe. It’s a simple one to do ahead: you grill the corn on the cob and then grill the figs (they take barely a minute). You slice off the corn kernels, toss them with the figs, and serve the dish at room temperature. The golden vegetable and dark fruit are a great-tasting and pretty combination just as they are, but if you happen to have some Drizzling Sauce of Balsamic Vinegar already made (or a bottle of balsamic vinegar to reduce), it’s definitely worth applying the final swirl of sauce. The acidic tang sets off the sweetness of all the sugars in the corn and figs, already intensified by the heat of the grill. You can use either a gas or a charcoal grill for this, but keep the fire moderate (and pay attention, especially with the figs) so the sugars are caramelized, not burned.

Smothered Eggplant and Summer Vegetables

Caponata is a dense condiment of chunky fried eggplant and other vegetables and seasonings, jam-packed with flavor—sweet, sour, and salty all at once. Sicilians make caponata in many variations and enjoy it in countless ways. Here’s a version I love. Use it as a condiment on grilled meats and steamed fish, as a sauce for pasta, or as topping for bruschetta.

Peach Tart with Cocoa-Almond Crust

Decades after the fateful bite that I took of the peach when I was in Padova at the age of twelve, I still think there is nothing more sensuous than biting into a perfectly ripe peach. When the same peach is baked, though, it takes on an additional element of complexity in flavor. Bake the peaches on an amaretto crust, with a hint of chocolate, and you have a delectable Italian flavor harmony.

Flan de Elote

Although this is not one of the most traditional recipes, I have seen it in different areas of the country, probably because it combines two of our favorite things: corn and flan. Most of the corn flans I have tasted are made with condensed milk, so I’ve tried to recreate that flavor and texture. Make this with white corn at the peak of the season to ensure that the flavor really comes through.

Ratafia de Durazno

Ratafias are cordials made from macerated infused fruits, herbs, flowers, or spices; they make a wonderful digestif. Be sure to keep in a dry place away from direct sunlight while the liqueur steeps.

Atole de Zarzamoras

The word atole comes from atl, “water,” and tlaoli, “ground corn.” These beverages have been consumed since pre-Hispanic times and the variations are countless. Made with water, milk, or a combination of the two, and commonly thickened with masa, the beverage is also made with ground toasted corn, fermented corn, rice, oatmeal, fresh corn, or mature corn cooked in ashes. It is sweetened with sugar and/or piloncillo and often mixed with fruit. This drink is enjoyed with sweet tamales early in the morning or at night. This atole is very popular in Michoacán, and I want to thank Ernesto Hernandez Doblas for the recipe.

Roasted Corn on a Stick

Corn on a stick? Did somebody say big-kid treat? Don’t forget the mayo: you’ll need to make the chile powder and cayenne stick. No grill? No worries, you can go the old-school route with a hot cast-iron skillet.

Grilled Smoked Sausage and Pepper Sandwich

PAT I can eat grilled sausage all by itself: there is something about the mix of pork and spices that just makes my belly happy. Now, I can also eat grilled peppers and onions all by themselves—or as a veggie side dish. Combine the two, however, and it’s “Look out!” (I like to add spicy Creole mustard for a little extra kick.)

Sparkling Raspberry Lemonade

PAT One of the things I truly love about Gina is that she is so creative when it comes to beverages. This lemonade is as sparkling, stimulating, and sexy as my darling wife. The seltzer water gives this refresher a great bubbly taste. Gina uses raspberries, but you can substitute any fruit you love and you’ll still be singing, “Oh, happy day!”

Smoky Corn and Zucchini Salad

Ready for a grilled salad? This late-summer mix will end your wait. No meat, just fresh, tasty grilled vegetables over baby arugula, basil, and cherry tomatoes.

Green Pasta Salad

GINA Salad helps lighten the fare, and these green beans with cheese tortellini are a nice change from the traditional tossed salad. I am a big salad-eater, and there are a lot of women like me out there. Honey, we’re trying to stay as “fabulous” as we can, eating all those greens. We just have to mix it up a bit so we don’t get bored!

Poached Peaches and Cream

GINA Peaches are one of my favorite fruits, and cream always complements them. This dessert is refreshing and light: you don’t want to get your man too full, or else you will be watching him sleep. The sweet champagne and fresh vanilla will relax his senses just enough.

Grilled Lobsters with Lemon Basil Butter

GINA Can’t have a Mini-Moon without my favorite seafood. Lobster, lobster, lobster . . . Some people find it too expensive, but isn’t your relationship worth it? If you are going to splurge, then splurge on your biggest investment. Dip it in the drawn butter, feed it to your honey, and let your imagination run wild.

Fig and Arugula Flatbread

GINA You could easily order pizza for delivery, but why not have flat-bread instead, and cut it into little squares? You can just buy the dough from your local grocer (or your local pizzeria, if you ask nicely) and add in all the other ingredients. Ripe figs will turn your traditional pizza into an amazing party favorite. We absolutely love this dish: it’s hearty yet light, fruity, and flavorful. If you find the taste of blue cheese too strong, you can always substitute a mild goat cheese, which has a creamy tang that also goes well with the figs. We add the handfuls of fresh arugula to the flatbread while it’s still hot, to add a pop of bright peppery flavor and color.

Grilled Apricot and Peach Shortcake

PAT I have a confession—when I was a kid, I would jump my grandmother’s neighbor’s fence and pluck peaches from Mr. Johnson’s trees. I figured that there were so many of those little darlings hanging from Mr. Johnson’s trees he surely wouldn’t miss a few. Looking back on it, you could say those peaches helped me develop an appreciation for the simple pleasures life has to offer. Over the years, we’ve grown fond of grilling sweet fruit. (Yes, we do “grill everything.”) When you add the smoky flavor from the grill to the sweetness of the apricots and peaches, well, you are talking about a different kind of dessert from the shortcake you’re used to. Ours also calls for biscuits (talk about a Neely spin on things!). And the turbinado sugar is just a fancy name for sugar in the raw . . . like me!

Summer Rice Salad

PAT Grilled corn is good enough all by itself. Here we feature it in a light, slightly smoky salad with rice, bell peppers, cherry tomatoes, and kidney beans. It’s an awesome combination, but once you add in the feta cheese, “Girl, you did that!” That’s what Gina’s mom always says. We used white rice, but brown will work just as well and give it an earthy, nutty flavor.

Fresh Strawberry Ice Cream with Shortbread Crumble

PAT I guess you could say I developed a love of ice cream because of my grandmother. For her, only homemade would do, and her homemade was some of the very best. Her fresh strawberry ice cream was one of my favorites. It so happens that Father’s Day falls smack in the middle of strawberry season—and don’t you know it, Grandma, I’m taking a page from your playbook. There’s something about fresh strawberries and cream, and when you spoon out a mouthful of this ice cream, you’ll see what I mean. The best thing about this recipe is that you can make more and have some for the day after Father’s Day. The sweetened condensed milk makes this a creamy, very soft, and scoopable ice cream.

Grilled Mini-Pizzas: Roasted Vegetable with Smoked Mozzarella, and Pepperoni

Don’t let these puppies fool you. We call them mini-pizzas, but there’s nothing all that little about them, in either size or flavor. It just makes us feel better, because you find yourself eating a lot of them before you know it!

Berry Sangria

Ladies, this is my go-to drink on a warm summer day. And don’t you know, men love it, too (even though it’s pink!). It’ll satisfy any thirst you may have worked up, but go easy, because even though it may taste like Hawaiian punch, it packs a wallop!
