A century-old dish, the following was probably named for its color (a resemblance to Harvard crimson); it seems to have no other connection with the school. Can be prepared in 45 minutes or less. Makes use of the microwave oven.

Partially drying the tomatoes in the oven concentrates their taste, giving them a wonderfully deep flavor and great chewiness. The red of the tomatoes, the white of the cheese, and the green of the basil make this dramatically colorful salad especially enticing. Serve with good crunchy bread.

It's great mixed into guacamole or veggie sautés (for a little tangy kick). Or try it as a topping for anything from nachos to scrambled eggs to baked potatoes. Grilled Corn with Smoked Paprika Butter

If smoked paprika isn't available, substitute four teaspoons of chopped canned chipotle chiles in adobo sauce, which are available at Latin American markets, specialty foods stores, and in the Latin American foods section of many supermarkets.

Walnut, Golden Raisin, and Fennel Seed Scones
