Rice-Stuffed Tomatoes

Even though I call these “stuffed” tomatoes, don’t actually stuff the rice filling into the tomatoes. Fill them loosely or they will be dense and dry after baking. You can put the tops back on the tomatoes flat or prop them up at an angle. Rice cooked this way—with a little olive oil and bay leaves—is a good dish on its own. We used to feed it to children or adults when they were recovering from an upset stomach, but don’t limit it to that. In addition to stirring the fresh basil into the filling, shred as much as you like and scatter it over the tomatoes after you put them on a plate. Basil and tomato is a union made in heaven, and who am I to question heaven?

Eggplant Parmigiana

When I bread and fry things like these slices of eggplant, I make a little assembly line that leads from the flour, to the eggs, on to the bread crumbs, and right into the pan of hot oil. Placing three rectangular cake pans side by side next to the stove works nicely—there is very little cleanup afterward—but any container wide enough to hold several slices of eggplant at a time will work just as well. This dish can be made with roasted eggplant slices instead of breaded and fried eggplant. Although it will be good, it will not be as tasty, nor will it have the texture of the fried eggplant. The roasted version is very simple: Drain and rinse the eggplant as described above, but instead of coating the eggplant slices, toss them with a few tablespoons of olive oil. Brush a baking sheet with olive oil, and set the eggplant slices side by side on the baking sheet. Bake them in a 450° F preheated oven for 20 minutes, till they are golden brown. Let them cool, and proceed to layer and bake the ingredients as below.

Tripe in Tomato, Carrot, and Celery Sauce, Roman-Style

Texture is a very important part of the gustatory pleasures of tripe. Tripe should be soft and yet resilient; you do not want it mushy. In this recipe, as I do when making many long-simmered sauces, I keep a pot of hot water near the tripe as it simmers. From time to time, I check the tripe, ladling in water if the sauce has cooked down and some of the tripe isn’t covered. At the end of cooking, there should be enough sauce so the tripe is nice and juicy but not watery.

Pan-Fried Garlic Bread

Traditionally, in Italian-American restaurants, garlic bread entailed lots of chopped garlic mixed with butter and a little oil. This version, struffinato—or rubbed—with a smashed garlic clove, is more subtle, and is the right match for the Arugula and White-Bean Salad (page 60) or the Escarole and White-Bean Soup (page 86).

Rice Salad Caprese

Rice salad can be made with long- or short-grain rice. I prefer short-grain rice, like Arborio, because it cooks up fluffier and absorbs more of the flavors of the other ingredients in the salad. Long-grain rice, like Carolina and Uncle Ben’s, stays firmer and has a more “staccato” effect—that is, it’ll stand more separately and distinctly from the other ingredients. The one good thing I can say about pasta salads is that people feel comfortable improvising with them. Feel free to treat rice salads the same way. Although there are some traditional combinations, like seafood rice salad or shrimp-and-asparagus rice salad, you can really be creative and make any combination. And they are a great way to use leftovers. For this dish, I took the classic salad of mozzarella, tomato, and basil from Capri, added rice, and dressed it with virgin olive oil and lemon juice. Some of my other favorite combinations are shredded grilled chicken, tomatoes, and arugula; cubes of grilled fresh tuna, Gaeta olives, Cerignola olives, cherry tomatoes, sliced red onion, and basil; grilled vegetables like peppers, zucchini, eggplant, and mushrooms with shavings of Parmigiano-Reggiano; thinly sliced raw baby artichokes, diced celery, and shavings of Parmigiano-Reggiano; rice-salad “antipasto” with cubed prosciutto, mortadella, cacciatorino, provola, Pecorino, Gaeta olives, roasted peppers, pickled mushrooms, and pickled artichokes.

Arugula and White-Bean Salad

You can make this salad with Braised Cannellini, and save the rest for a side dish, or you can soak and cook an extra 1/2 cup of beans when you make the Escarole and White-Bean Soup on page 86. In that case, remove the beans for this salad before you stir in the escarole and finish the soup. If you do make this salad when you’re making escarole soup, substitute some of the tender, inner leaves of escarole for the arugula, and use the tougher, outer escarole leaves for the soup. You don’t have to use cannellini beans. Kidney beans, chickpeas, or just about any beans you like can go into this salad. Whichever beans you use, cut the onion thin and at the last minute so it stays crunchy.

Caesar Salad

Pick the youngest, crunchiest romaine heads you can find. Keep them crisp, before and after cleaning, in the vegetable drawer of the refrigerator. Even if you pick young, crispy lettuce, you should use only the pale-green and yellow inner leaves for this salad. But don’t throw out the outer leaves. Shred them and stir them into soups, or into a panful of sautéed fresh peas. The dressing shouldn’t be too dense; it should be just thick enough to coat each leaf lightly. The cheese that is added at the end will thicken it a little. Oil and vinegar stirred in at the end is a little touch of mine. It’s how we serve the salad at Lidia’s Kansas City and Pittsburgh. Another little touch that looks nice on a plate is to set one or two whole romaine leaves on the plate and pile the cut leaves over it. Shaving Parmigiano-Reggiano over the finished salad looks nice and tastes nice, too. It’s a good thing to keep in mind for other salads as well. Traditionally, Caesar salad was made with a barely cooked egg. Here I use a hard-boiled egg, as I do in my restaurants, for safety reasons.

Spinach Salad

This is the way we first served spinach salad at Ristorante Buonavia—and the way it was served in a lot of other Italian-American restaurants at the time. I love it just as much with sliced, roasted or boiled beets in place of the mushrooms. If you don’t have bacon, or don’t want to use it, make a spinach-and-mushroom salad with an oil-and-vinegar dressing (using about 1/4 cup olive oil to 3 tablespoons of vinegar). With a vegetable peeler, shave 1 cup of Parmigiano-Reggiano cheese and toss it in at the end.

Fried Banana Peppers

Banana peppers are a long, thin-skinned mildly spicy variety of pepper that, because of their skin and fairly meaty texture, are perfect for frying. To serve them as a room-temperature salad, prepare them as described below. If you prefer to serve them hot, arrange the peeled peppers and their juices in a baking dish, sprinkle the bread crumbs over them, and bake in a hot oven until the crumbs are lightly browned.

Sweet and Sour Marinated Vegetables

Sometimes I peel eggplants completely, sometimes not at all. Leaving the peel on adds a slightly bitter taste—which I like—but also helps the eggplant hold its shape after you cut it into cubes or slices. If you want the best of both worlds, remove thick stripes of peel from the eggplant, leaving half the peel intact. Caponata can last several days in the refrigerator and is even better after marinating for a day. It is best eaten at room temperature, so remove it from the refrigerator about 2 hours before serving. Caponata is usually served as part of an antipasto assortment, although it makes a wonderful summer contorno, or side dish, to grilled meats or fish.

Breaded and Fried Zucchini

When my mother made fried zucchini for us, she would slice the zucchini lengthwise into 1/ 4-inch slices. Sometimes she would flour them, dip them in egg batter, cover them well with bread crumbs, and fry them, as I do here. But sometimes she would just dip them in flour and eggs and fry them. I liked them both ways. The ones without bread crumbs I make often for a vegetable buffet or antipasto. After they are fried and drained, I roll them like a jelly roll and serve them just like that. The best zucchini to use for this—and most—recipes are small ones, about 6 inches long, with bright skins and a firm texture. Zucchini of this size are called “fancy” in the restaurant business. You’ll see them labeled like that in some markets as well. Fry the zucchini in batches for better results. Overcrowding the oil when frying zucchini, or for that matter anything, lowers the temperature of the oil drastically, and that causes a lot of problems. First, the food becomes poached and not fried, and absorbs much more oil. The zucchini pieces will stick to each other and cook unevenly, without the nice, crispy crust which is one of the reasons we fry in the first place.

Stuffed Mushrooms

Serve these nice and hot, or let them cool to room temperature. If you’d like to make this a little more contemporary, you can add a dash of balsamic vinegar to the red peppers and scallions as they cook. In true Italian-American style, these are topped with butter, but in Italy, we would use olive oil. Best yet, top them with butter, then “bless” them all with a little olive oil. This wonderful stuffing is delicious in celery stalks baked with a light tomato sauce. You can also line up blanched asparagus on a baking sheet, sprinkle the bread crumbs over them, and bake them until the crumbs are crispy. I’m sure you can come up with a lot of uses for the bread crumbs. Remember, I give you the basics, but I want you to go and play.

I’ve updated these classics of Italian-American cuisine a little by using fresh thyme. If you like, you can substitute (or add) dried oregano. Chopped anchovies make a nice addition, too.

Stuffed Artichokes

The flavorings in this dish are zesty—a combination of the traditional and a few touches of my own. The anchovies add a lot of flavor, but if you don’t like them, don’t use them. Lemon zest lightens the flavor of this hearty dish a little. (You might find that adding just a little bit of zest to other robust dishes will do the same for them.) It may seem strange to chop the crushed red pepper—especially as they fly around the chopping board a bit while you’re trying to do so—but it prevents you from biting down on a big flake of pepper in the stuffing. If you have vegetable stock or chicken stock, you may use it in place of the water called for in the recipe. It will surely add flavor.
