The heat in fresh poblano chiles varies considerably; you may want to use more than one in this dish if they are not too hot. The sautéed vegetables can sit at room temperature for several hours before serving.

Warm Mussel and Marinated Vegetable Salad
Eric: If you have to make mussel broth for another recipe and don't know what to do with all the leftover mussels, this dish is the perfect solution. On the other hand, if you want to make this salad and don't have a use for the broth, just freeze it.
Maguy: The crunchy diced vegetables contrast perfectly with the softness of the mussels, even though it's not the wonderful moules marinière of my childhood.
Lisa's Grilled Zucchini
The extra-virgin olive oil from Countess Lisa-Contini Bonacossi's estate is a favorite of mine and an important element in Lisa 's great cooking. She has an easy going style, changing recipes according to what's in the garden and larder, and is hard to pin down about quantities. Lisa slices her zucchini with an electric meat slicer. I use the 3-mm. blade of my food processor to slice by hand, not with the machine.
Can be prepared in 45 minutes or less.
Smoked Vegetables with Garlic Vinaigrette
Escalivada, from Catalonia in northeastern Spain, is a mixture of vegetables roasted in the ashes of a slow fire. Plenty of wood chips add a smoky nuance here; the finished vegetables are offered at room temperature in a roasted-garlic vinaigrette.
Cactus and Zucchini in Oaxacan Pumpkin Seed Sauce
If you can't find raw unhulled pumpkin seeds, you can substitute 6 ounces of the hulled (green) ones, but the pipián (seed-thickened sauce) will be richer.

Warm Chicken and Chorizo Salad
This midsummer fare is adapted from a dish I enjoyed at 192, our favorite wine-bar-restaurant in London's Kensington: its inspiration is, I am sure, from Spain. You can buy a whole chunk of chorizo sausage — or a string of smaller ones — to slice yourself. Most good gourmet stores stock chorizo (mild or spicy), and many supermarkets do, too.

Feel free to add, subtract, or substitute any raw or cooked vegetables you'd like, but make sure there's a good variety of textures and colors.
Francesca's Zucchini "Carpaccio"
For this dish, fresh spring-summer zucchini are imperative. I use a 1-mm. food processor-blade as if it were a mandoline to hand-slice the tender zucchini.
