White Beans, Pancetta, and Pasta
This is a mix-up of pasta e fagioli and minestra. Again, my indecisiveness is at play.
Beans and Greens Soup
Pancetta gives the soup its deep flavor. It is rolled cured pork that is similar to bacon, but not smoked. It is widely available at the deli counter in larger supermarkets or small Italian import shops.
3 Beans and Some Chicken
I called this recipe “3 beans and some chicken” because I didn’t want to put on any airs. If you’re having people over for dinner and your guests inquire what you are serving, by all means posh it up and inform them that you are preparing “Lemon-Scented Sautéed Poulet with Legume Ragout.” Snap!
Papa al Pomodoro
This thick soup is a ribollita (stale bread soup) made with tons of tomatoes. Torello (literally, “The Bull”) from Florence makes his with tomatoes grown on his own land in Tuscany. At his restaurant, Il Latini, he taught me the manner—the only manner—in which one eats any type of ribollita: with chopped raw onions and a drizzle of EVOO on top. If you are not committed to this process or if you don’t do raw onions, skip this recipe. You’re not to eat it any other way. Torello will find out, and I’ll be in for it!
White Beans and Carrots
When I was in the southwest of France in mid-October, the farmers’ markets had an abundance of large dried white beans. These lima beans, which came to Spain from the New World, have now become an integral part of the Old World’s cuisine. Before the discovery of the Americas, only fava beans, chickpeas, and lentils were to be had. My cousin Richard Moos’s wife, Hélène, cooked her white beans with carrots in goose fat rather than lard. The day before, I had eaten the same combination in a soup at a farm nearby. Either way, this is a great fall dish.
Southwestern Cassoulet with Duck and Lamb
Fava beans and chickpeas were brought to France in the thirteenth century with the opening of trade routes by the Crusaders. Before white beans came from the New World, the French used fava beans for cassoulet and called it févolade. Cassoulet could well be a variation of the overnight Sabbath stews such as dafina or hamim, which means “warm.” Cassoulet could also have come from the Arabs, who made a similar dish, skeena. All I know is that, in a land where there is lots of pork, in a land where the Jews played a role in developing the art of fattening goose livers, cassoulet looks suspiciously like the ubiquitous Sabbath stews, and often has no pork in it at all. This cassoulet calls for lamb shoulder and a great deal of duck or goose fat instead in which to cook the duck legs and sausage and lamb (it is not all consumed). You can use vegetable oil, but it will not taste the same. E-mail Aaronsfood@aol.com for a place to obtain rendered kosher duck fat, or roast a duck and make your own.
Tajin Sibnakh
In Tunisia, where egg dishes are ubiquitous, they call this a tajin because it is cooked in a clay dish of that name. It can be eaten hot or cold.
Chickpeas with Turmeric
In Morocco, this is considered “poor food.” It is eaten hot with bread to soak up the juices. You could make it with canned chickpeas, in which case it would take only a few minutes to cook, but for a large quantity like this, it is worth using dried chickpeas, as their taste and texture is better and they will have time to absorb the flavors. You need to soak them in water for a few hours or overnight.
White Bean and Dried Tomato Spread
This is fantastic on fresh pumpernickel or rye bread for lunch; or spread it on fresh Italian bread to serve with light pasta dishes.
Cannellini with Fresh and Dried Tomatoes
Here’s a zesty bean dish that’s practically ready when you are.

Warm or Cold Tomato and White Bean Soup
Fresh herbal overtones lift the flavor of this instant soup. White beans make a creamy base for soups, dips, and sauces.
Polenta with White Beans & Black Kale
This terrific dish brings into one bowl three essential Italian foods: polenta, cannellini, and the unique variety of kale called cavolo nero—one of my favorite vegetables. The customary green in Tuscan ribollita, cavolo nero has an earthy mouth-filling flavor, as if cabbage, broccoli, chickory, and spinach were all packed into one leaf. Fortunately, this delicious and healthful vegetable is now being grown and sold in this country under a variety of names, including lacinata, or dinosaur kale (for the texture of the leaves), and black kale (for their dark hue). In this recipe, cavolo nero is braised with bacon and cannellini and served atop hot polenta. But you can just braise it with bacon, following the same basic procedure, and serve it as a delicious side dish, or enjoy it in crusty bread as a great sandwich filling.
Apple & Bean Soup
Every region of Italy has a fagioli (bean) soup, often quite filling, with potatoes and pork and either pasta or rice. Interestingly, it was in Trentino–Alto Adige, renowned for the heartiness of its soups, that I had this unexpectedly light bean soup, cooked with fresh apples and delicately spiced. It is vegetarian (also unusual), nourishing, and quite scrumptious. The combination of apples and beans is marvelous, and one of the pleasing features of this recipe is that simply by using less water you can make a great bean-and-apple side dish, a perfect accompaniment to roast pork, duck, or ham.
Linguine with Italian Tuna and White Beans
Be a bean counter! The new USDA guidelines recommend having 1 1/2 cups of legumes weekly for their protein, fiber, iron and more. This hearty, lightly tangy dish gets you a third of the way to your goal.
