Turkey Chipotle Chili

Although this recipe doesn't produce the familiar-looking red chili--it's more green than red--it does turn out a chili that has become one of our staff favorites.

Grill-Roasted Brined Turkey with Anaheim Chile Salsa Verde

Editors' note: In the recipe below we cooked our Thanksgiving turkey on a gas grill, but a 22 1/2-inch charcoal kettle grill will also work. Cooking times and results may vary, of course, according to the weather and type of grill. The gas grill we used had a thermometer, and at the lowest settings, the grill (with lid closed) maintained temperatures between 350°F. and 400°F. We did not stuff this turkey because when cooking on a grill it is difficult to maintain the steady temperature to adequately cook the stuffing. Instead, we baked our chorizo, roasted corn, and currant dressing in the oven. If you prefer to roast your turkey in the oven, follow the cooking instructions given in the recipe. We brined our turkey because we love the exceptional flavor and moistness that the method imparts to lean meats. If the brining process is too much for you to take on at Thanksgiving time (a 5-gallon bucket and an extra refrigerator come in handy), feel free to omit the step. Simply season the bird with salt and then cook as directed.

You can make this dish with white truffles as well. Canned white truffles are more pungent than the black ones and provide an exciting gastronomic treat when added to the sauce.

Epicurean Broiled Turkey

Turkeys weighing 4 to 7 pounds will be excellent broiled — grilled. They must be split and cooked over low heat — far from the coals — for the first 40 minutes. Then they may be moved closer to the heat to finish cooking and browning.

Turkey Cutlets with Springtime Vegetables

Marinate thinly sliced radishes and sweet onions in a Sherry vinaigrette for a side salad. Serve coarsely mashed potatoes with the turkey, and for dessert, layer strawberry ice cream with sugared strawberries in large wineglasses.

Jean Anderson, author of The American Century Cookbook, traces the origin of sloppy joes to the depression-era 1930s, and the popularity of this messy ground-beef sandwich increased markedly in the fifties and sixties. We update it with ground turkey, canned diced chilies and ale.

Escarole and Orzo Soup with Turkey Parmesan Meatballs

If desired, grate a little extra Parmesan cheese for passing; a sprinkling over the soup will echo the flavor in the meatballs.

Roast Turkey with Corn Bread Stuffing and Giblet Gravy

A flavorful turkey prepared in an interesting way. It is soaked in brine, which helps tenderize the bird, and then rubbed with a citrus-thyme butter. Maple-Glazed Roast Turkey with Mixed-Herb Gravy

In early spring, colonists would tap into sugar maple trees to draw off the smoky-sweet syrup, which was a substitute for expensive imported sugar. Here, the syrup is brushed onto the turkey to add a deep golden finish. New Englanders liked their gravies rich and dark, and often kept a box of browned or "scorched" flour on hand to aid in browning, as well as flavoring and thickening.
