Camembert Fondue with Truffle Essence
"I've been telling everyone about the absolutely incredible birthday meal I had at Park Avenue Café here in New York City," writes Sherri Steinfeld Maxman of New York City. "The knee-weakening menu included Burke's famous "pastrami" salmon; a morel flan served with eggshells nestled in eggcups; basil-rubbed rack of lamb with oven-dried tomato ravioli; Camembert fondue with truffle essence; and a dazzling array of desserts."
Executive chef David Burke uses the term fondue freely, in this case applying it to a truffle-flavored cream sauce served with a slice of Camembert. Postwar Prosperity Brownies with Ice Cream and Chocolate-Peanut Butter Sauce
During World War II, chocolate was too valuable to be used for baking. As a result, brownies, which had been a favorite since around the turn of the century, were made less often. With the return to prosperity in the 1950s, this much-loved dessert came back into vogue--and became more popular than ever. Our rich and dense brownies are studded with peanuts and chocolate chips, and are partnered with a rich milk chocolate and peanut butter sauce. They're terrific served with vanilla ice cream, peanut butter-vanilla swirl or peanut butter ice cream. Serve the brownies slightly warm or at room temperature.

Walnut and Pancetta Pansoti with Asparagus in Parmesan Broth
The plump ravioli called pansoti ("little bellies"), a Ligurian specialty, are often dressed with a walnut sauce. We strayed from tradition a bit and tucked the walnuts into the filling instead. Be sure to buy pancetta that's well marbled: If it's too lean, it won't render enough fat to flavor the filling. Also, brown the onions well — the caramelization lends a depth and richness that's essential to this dish.
Lamb in Spiced Yogurt Sauce with Rice and Bread
Mensaf
This recipe, adapted from Kathy Sullivan and Janine El Tal, international educators and longtime residents of Jordan, is a scaled-down version of that country's national dish, which is usually served in large quantities at important gatherings. Mensaf is eaten standing up, using the right hand to form a little ball of rice and meat. Traditionally, jameed, a ball of reconstituted sun-dried yogurt, is used to make the sauce, but it is replaced here by regular plain yogurt that has been stabilized (with egg white and cornstarch) for cooking. Buy the richest, tangiest yogurt you can find.

Chocolate-Almond Sauce
For a nice gift, simply decorate the jars with gold ribbon, and attach tags that include the rewarming instructions. Or pack a basket with a jar of this sauce, Coffee-Caramel Sauce , an ice cream scoop and four or six sundae goblets.
Panque de Almendra
Almond "Pound Cake"
Panque is apparently a phonetic spelling of "pound cake," though it really isn't very similar. The texture is somewhat more like a sponge cake. My recipe is an adaption of one by Mària Concepción Portillo de Carballido.
