Beef Barley Soup with Wild Mushrooms and Parsnips

This recipe yields enough to have leftovers the next day. Serve with glasses of beer or Zinfandel for a warming autumn supper.

Shiitake Beef Stroganov

Can be prepared in 45 minutes or less.

Beef Tenderloin and Vegetable Pot Pies

Brian Preinfalk of Show Low, Arizona, says there’s nothing he’d rather eat on a cold winter day than one of the beef pot pies at Creasey’s Restaurant in the nearby ski resort town of Pinetop.

Brie and Wild Mushroom Fondue

Porcini and shiitake mushrooms are the delicious difference in this fondue. Other varieties would work well, too.

Taro Root Cake (Woo Tul Gow)

Homemade taro root cake is unsurpassed if the home cook doesn't skimp on the ingredients. Thick slices of taro cake, richly flavored with scallops, mushrooms, shrimp, Chinese bacon, and creamy taro are pan-fried until golden brown and fragrant. My Auntie Ivy's mother, Che Chung Ng, makes such a recipe and is famous in the family for both her Turnip Cake and Taro Root Cake. Every New Year, she cooks several cakes and gives them away as gifts to close family members. Nothing is measured exactly, and it is impressive to see her produce cake after cake, especially because she is over eighty years old. Spry and agile, she cooks with full energy and total intuition, never missing a beat. She kindly taught me this recipe and the one for Turnip Cake. Wear rubber gloves when handling taro, as some people can have an allergic reaction to touching it. Also use rice flour, not glutinous flour! See the introduction to Turnip Cake for how to serve and store this New Year's cake.

Spicy Braised Chicken with Mushrooms and Star Anise

Just add steamed rice for a complete family-style Chinese dinner.

Southern Fried Chicken

"Last summer my husband and I took a day trip to the coast of New Hampshire," writes Perrin Enriquez of Cambridge, Massachusetts. "We found a fabulous place in Portsmouth called Lindbergh's Crossing, in a rustic building on the water. I'd love to get the recipes for the amazing fried rabbit and garlic mashed potatoes we had in the upstairs wine bar." For convenience, we substituted chicken for the rabbit used at the restaurant. The gravy can be made ahead of time, but the chicken should be fried just before serving.

Braised Lamb Shanks with Ginger and Five-Spice

These Asian-inspired lamb shanks are wrapped and baked in individual foil packets, then placed atop bowls of steamed rice. Serve with stir-fried bok choy or other Chinese greens. What to drink: Asian lager beer or a fruity red Zinfandel.

Morel-Crusted Ribs with Polenta

The ribs can be braised one day ahead and topped with the breadcrumb mixture shortly before serving. What to drink: Robust Pinot Noirs with firm acid (to cut the richness of this dish), such as French Burgundies from Volnay, and Oregon or California Pinots.

Wild Mushroom Risotto With Truffle Oil

Bourdain embellishes this risotto with black truffle shavings, but we thought it was delicious even without them. We opted for a cost-effective alternative — drizzling the risotto with truffle oil just before serving.

Wild Mushrooms with Chestnuts and Thyme

This rich side dish could easily stand on its own as an elegant meatless main course.

Sweet Potato Purée with Goat Cheese and Truffle Oil

Goat cheese and truffle oil add rich flavors to the humble sweet potato.

Chicken with Truffles and Champagne Sauce

CHAMPAGNE A dish that's refined yet spirited, much like the bubbly that has made the region so celebrated. For a first course, serve steamed leeks bathed in a simple vinaigrette. What to drink: Champagne, of course.

Sauteed Chicken with Hominy Casserole

Hominy was as common on the table when I was growing up as rice is today. It is not used too much anymore but is still readily available in some regions, particularly in the south. You can buy it in cans or loose, sold in bulk, and sometimes you can find it in health-food stores and packaged alongside the other grains in the supermarket. The brand I buy is Monte Blanco or Goya. I have found that Spanish brands are more tasty. After you have opened the can, wash the hominy 3 or more times with cold water and drain well. This removes the taste of the liquid it soaked in. Hominy is dried, hulled whole kernels of corn; grits are finely ground hominy. Usually hominy is boiled and served hot for breakfast, plain or with gravy. Because I think it is a little like tiny dumplings, I like to cook it with sautéed chicken so that the juices from the chicken and the vegetables can mingle with the hominy.

Mushroom-Leek Soup with Brie Croutons

"I love going to Peter Schott's here in Boise for special occasions," writes Tracie Merrell of Boise, Idaho. "The restaurant is elegant but relaxed, and the food is memorable, especially the mushroom soup with Brie croutons." Freezing the Brie firms it, so removing the rind and slicing the cheese are much easier.

Porcini Mushroom and Barley Soup with Pancetta

This hearty soup is served at Belvedere Mansion in Staatsburg, New York.
