Tamales de Pasitas con Nuez
Corn tamales have prevailed for at least five centuries as ubiquitous protagonists in ceremonies and rituals such as Día de los Muertos. This preparation is from Durango, and I want to thank Ricardo Gurrola for providing me with the recipe. They go deliciously well with Strawberry Atole (page 29).
Tamal de Limón
For a few years now, my dad and his partner Manuel have made an incredible Día de los Muertos celebration in a country house located near Cuernavaca. They invite friends and neighbors, attempting to preserve the culture that many children in big cities confuse or associate nowadays with Halloween. Hundreds of assorted tamales and hot chocolate are always made to welcome the guests as they come to visit the awesome ofrenda. One year, Mrs. Catalina, the charming woman responsible for the tamale feast, kindly showed me how to make them (although she didn’t let me touch the batter because she said it would separate). The lime zest ones were my absolute favorite and remind me of a very light and airy sponge cake. The bit of shortening helps give it a wonderful texture, but you may substitute more butter if you prefer.
Champurrado
This is one of the oldest beverages in Mexico and uses two of the main ingredients indigenous to the Americas: cacao and corn. It is essentially a thick corn beverage made with a bit of chocolate and lightly sweetened. It is sold in markets, outside bus stations, and near churches. It is present at many celebrations, from birthdays to baptisms, and is a popular accompaniment to sweet tamales. This recipe was given to me in the state of Tabasco, where I visited some wonderful cacao plantations that are lucky enough to have the ivory criollo bean, one of the highest quality in the world. Originally, champurrado was made with the shells of the toasted beans, but it is now made with the chocolate tablets used for chocolate caliente. If you don’t have any homemade tablets or can’t find them in the store, you can substitute the same amount of bittersweet chocolate and add another stick of canela.
Atole de Amaranto
Amaranth was a primary source of protein and an essential part of the diet for the pre-Hispanic population of Mesoamerica. It was often described as the “golden grain of the gods.” The seeds from the plant are considered one of the most nutritious grains and are a good substitute for wheat for those on a gluten-free diet. I like it simply for the flavor. I think it’s pretty awesome that the conquistadors forbade its cultivation because it was associated with human sacrifice, and yet, because of some “rebels” who valued the importance of their culture and traditions, it is still around thousands of years later. That surely should not go unnoticed! You can buy amaranth fl our and puffed amaranth in some health or specialty food shops and online (see Sources).
Atole de Zarzamoras
The word atole comes from atl, “water,” and tlaoli, “ground corn.” These beverages have been consumed since pre-Hispanic times and the variations are countless. Made with water, milk, or a combination of the two, and commonly thickened with masa, the beverage is also made with ground toasted corn, fermented corn, rice, oatmeal, fresh corn, or mature corn cooked in ashes. It is sweetened with sugar and/or piloncillo and often mixed with fruit. This drink is enjoyed with sweet tamales early in the morning or at night. This atole is very popular in Michoacán, and I want to thank Ernesto Hernandez Doblas for the recipe.
Apple Crumb Pie
Now, here’s an old faithful; every Thanksgiving spread requires a great apple pie. Not a whole lot to say about it—it’s tasty, of course—but the crumb topping takes this pie up a notch. It’s as though you added a leopard-skin belt to your little black dress. The brown sugar, cinnamon, and allspice don’t hurt, either
Rise and Shine Granola
Filled with the energy of oats and the antioxidants of blueberries, this is the mix for a kick-ass day. Keep it on hand and nothing can stop you. What’s nice is, it’s not too sweet, not too fatty, and really flavorful. It’s just right; and when you’re away from your family or what’s familiar to you, this kind of homemade love will soften the blow.
Summer Rice Salad
PAT Grilled corn is good enough all by itself. Here we feature it in a light, slightly smoky salad with rice, bell peppers, cherry tomatoes, and kidney beans. It’s an awesome combination, but once you add in the feta cheese, “Girl, you did that!” That’s what Gina’s mom always says. We used white rice, but brown will work just as well and give it an earthy, nutty flavor.
Gina’s Hoppin’ John Soup
GINA Ever since I was a little girl, my mom has been telling me that if you don’t eat black-eyed peas on New Year’s Day you’ll have a bad year ahead of you. Now, when I was younger I didn’t care a bit. I was going through that awkward stage anyway—how much worse could it be? But as I got older, I learned to love that black-eyed pea tradition, convinced that my year was going to be fantastic! And you know what’s funny? I tell my girls the same thing. Who says traditions and superstitions aren’t effective? Not to mention that black-eyed peas are rich in calcium and vitamin A. What could be bad about that? Of course, this being a Gina recipe, I added in my favorite collard greens. . . . Mmm, even better.
Dirty-Rice Collard Green Bundles
PAT You won’t find a collard green—or a green of any kind, for that matter—that Gina hasn’t mastered and found a dozen ways to cook. She’s queen of the twists on greens. The idea for this particular twist came from stuffed cabbage with a vinegary red sauce—but we think this is even better than that recipe. Don’t you?
Party Tripe on Soft Polenta
The next time you feel like throwing a raging party for all your tripe-loving friends, this is the dish for you! If you’re making a face while reading this allow me to offer a cliché: don’t knock it ‘til you’ve tried it. Yes, even the best honeycomb tripe could be described as mild with an edge of musk. But all that means is that it needs a good, savory vehicle to deliver that fabulous texture straight to your mouth. Here, tomato sauce enhances the flavor, while beans provide a creamy textural counterpoint. I add mint, too, to give it some zing. This is a truly comforting dish that would be especially welcome on a cold fall or winter evening.
Duck Leg Farrotto with Pearl Onions and Bloomsdale Spinach
Duck breasts are delicious—that crackling skin and fat, the tender, ruby-hued meat. Duck legs do even more for me; the meat is darker, richer, and full of incredible flavor. If you plan on making a duck breast for dinner, buy a whole duck and roast the legs just so you can make this dish. Alternatively, I suppose you could buy a roasted duck from a Chinese barbecue and pick the meat. Bloomsdale is a lovely, crinkly variety of spinach that is full-bodied and flavorful. If you can’t find Bloomsdale, any heirloom or organic spinach will do. Make sure you wash the leaves well, dunking a few times to remove all the sand and grit.
Farrotto with English Peas and Morels
Farrotto is a risotto-style dish made with farro instead of rice, but the similarity stops there. Farrotto has a greater depth and nuttiness than regular risotto—not better or worse, just different. It also produces a more textured final dish. It’s out of this world paired with spring’s first earthy morels and peas, which add sweetness and dots of color. For tips on cleaning morels, see page 34. Farro is emmer wheat, often erroneously called “spelt” in English; you can find true farro in fancy grocery stores or specialty Italian markets.
Butternut Squash Risotto with Hazelnut Oil
Roasting the squash before incorporating it into the rice concentrates the flavor and adds great depth to this vibrant fall risotto. I use butternut here, but any firm-fleshed fall squash or pumpkin would work; kabocha would make an especially nice substitute. Cold-pressed hazelnut oil has a distinctive, nutty flavor, less pungent than some other nut oils, such as walnut. You can find some good brands from France, and one or two nice local oils that hail from the nut orchards of the Northwest. Although it’s expensive, it’s a great oil to use on salads and with certain desserts.
Clam Risotto with Lemon
This is a wonderful winter dish—fresh and simple with nothing to get between you and pure clam flavor. Steaming the clams first in a little white wine, then using that liquid in place of broth, infuses the rice with a briny essence that totally sings. Because of the star ingredient, you shouldn’t need to use much salt in the dish, and cheese here would be a no-no. A little butter at the end provides the perfect touch of richness, while a bit of lemon zest accents the clams perfectly.
Artichoke Risotto
I’ve met a lot of people who are so intimidated by the process it takes to extract the luscious heart from a large thistle that they never go any further with the artichoke than steaming it and melting some butter. There’s nothing wrong with that approach—it’s good eating, for sure—but it does keep you from enjoying a host of dishes that allow this regal vegetable to play a more suave, starring role. The single most common mistake people make when they prep an artichoke is to use a dull knife. Not only home cooks make that mistake, either. I’ve seen professionals prep artichokes so they look like they went through the dryer. Take a steel to your knife and follow the directions carefully, and prepping the hearts should be a breeze, giving you the star ingredient for a lovely spring risotto. This risotto takes a bit more liquid than some others in the book because the artichokes absorb some as they cook. Make sure the butter you add to finish the dish is cold, so it incorporates and adds richness and body.
Ramp Risotto with Shaved Porcini
This risotto is a special springtime treat, not only because of the delicate flavor of the ramps but also because the porcini is allowed to really be the star. I treat it like a fine truffle, shaving it with a mandoline in a shower over each bowl. The heat of the risotto softens the mushrooms ever so slightly, and the shavings add texture and a wonderful fragrance.
Spring Garlic Risotto
Otherwise known as green garlic and garlic shoots, spring garlic captures the essence of garlic without any harshness or bite. Unlike mature garlic, spring garlic should be featured in recipes that won’t overwhelm the delicate flavor, such as this risotto. Make sure you wash the spring garlic thoroughly to remove any sand.
Sautéed Polenta with Hedgehog Mushrooms and Aged Provolone
Hedgehog mushrooms are close relatives to chanterelles, with a similar flavor profile but a little bigger. They are abundant beginning in mid-winter; if you can find them in the market, grab them up. Their richness makes them a fantastic match for aged provolone and crispy polenta. This dish makes a great side, but it is also substantial enough to make vegetarian guests very, very happy. If you like, you can grill the polenta instead of sautéing it.
Grilled Polenta with Heirloom Tomatoes and Pounded Anchovy Sauce
Seattle summers are our best-kept secret—with long, lovely days just hot enough to make you want to stay out of the kitchen and linger outside. The perfect appetizer for a patio barbecue, grilled polenta is easy, crisp, and luscious, and is played to its best advantage when topped with juicy heirloom tomatoes brightened with garlic and anchovy. If you like, substitute basil or another favorite tender herb for the mint. This would also be nice served with a handful of baby greens on the plate.
