Bok Choy, Edamame, Cashew, and Orange Rice

This bountiful rice dish offers a variety of flavors and textures. I especially like the burst of sweetness provided by tiny orange sections.

Seitan and Polenta Skillet with Fresh Greens

Caravan of Dreams is one of the restaurants where my family likes to eat when we’re in New York City. It’s a funky, comfortable place in the East Village, with food that’s hearty and innovative (and all vegan). Once, my younger son ordered the Green Garden Platter, described as “seasonal mixed greens sautéed with grilled marinated seitan, garlic, and olive oil, topped with grilled carrot polenta in mushroom gravy.” I was intrigued by the combination of seitan and polenta, so when I got home, I made my own version, which bears little resemblance to the restaurant’s. There’s something enticing about the seitan/polenta synergy, and with the addition of greens, the result is a great-looking, hearty dish.

Pink Bean, Quinoa, and Spinach Soup

An appetizing, mildly spiced mélange of nourishing beans, grains, and greens, this makes a stellar centerpiece for a soup-based meal. Quinoa is an excellent source of protein, making this practically a meal in a bowl.

Maple Oatmeal Raisin Pie

The more subtle flavors of raisin and oatmeal allow the maple to shine through, and a tinge of coconut adds a final unexpected note to this cozy combination. This pie is so simple to make, and it’s a great dessert for a chilly fall night. I recommend serving this with a scoop of cinnamon ice cream or a dollop of Maple Whipped Cream (page 194).

Raisin Crunch Pie

At Michele’s Pies we have pies for peach fans, apple junkies, pineapple aficionados, and lemon lovers. But what about raisins? Just to be sure we had something for everyone, this pie combines raisins, sweet butterscotch, and crunchy oats and pecans to create an almost candylike dessert that will hit your sweet tooth just right. This pie is delicious served warm with a scoop of vanilla ice cream and a drizzle of Caramel Sauce.

Plum-Oat Crisp

This easy dessert can also be made in eight six-ounce ramekins—simply divide the filling and topping evenly among the dishes. The baking time will be the same.

Multigrain Rolls

These rolls can be stored in an airtight container for up to two days.

Oatmeal-Raisin Cookies

These classic drop cookies are large, soft, and chewy. Look for grade B maple syrup, which has a deeper flavor than grade A.

Oat and Dried Apricot Scones

Feel free to substitute other dried fruits for the apricots. We particularly like using sour cherries, cranberries, golden raisins, or chopped figs.

Swiss Chard and Goat Cheese Galette

Pies and tarts filled with Swiss chard, pine nuts, and raisins are common in southern France and Italy, where they may be served for dessert, sprinkled with confectioners’ sugar or toasted almonds. Goat cheese and anchovies make this galette decidedly savory, while the crust departs from the standard with wholesome oats and whole-wheat flour.

Neapolitan Easter Pie

John Barricelli, an excellent baker, television host, and a longtime friend of Martha’s, learned to make this Italian grain pie, known as pastiera, from his grandfather. The wheat berries are fitting for the Easter holiday, as they symbolize rebirth and renewal. The grains get soaked in water overnight before they are cooked in milk. Afterward, they are mixed with ricotta cheese and pastry cream to make an exceptionally delicious filling. John sells the pies—and many other wonderful baked goods—at SoNo Bakery in South Norwalk, Connecticut.

Rice Pudding Tartlets with Blood Oranges

Move rice pudding out of the bowl and into crisp tartlet shells; top each with juicy, ruby red blood-orange segments. The filling is flavored with vanilla bean and blood-orange juice. The tarts can be served warm, at room temperature, or chilled for an afternoon tea or as a delicious final course after dinner. Arrange the blood-orange sections in a floral pattern, then drizzle the tarts with extra juice.

Oatmeal-Apple-Raisin Cookies

Complete comfort food . . . Layer these with our Cinnamon Ice Cream (page 143) and savor the spicy-sweet goodness of this sandwich. Try using freshly grated nutmeg instead of ground—you’ll be surprised by the difference.

Creamy Polenta

When it comes to polenta, freshly milled corn makes all the difference. We are lucky enough to have Wild Hive Farm in Clinton Corners, New York, grind the polenta for the Shop (you can order it at www.wildhivefarm.com). Bob’s Red Mill is a great alternative that can be found in many supermarkets, health food stores, and online (www.bobsredmill.com). This recipe requires a slight investment of time, but the result is mind-blowingly good. Just make sure to whisk the mixture constantly until the polenta comes to a boil; otherwise it can easily burn. Polenta is incredible served alongside just about any kind of meatball, but it is classically served as a stand-alone dish. Try it with a ladleful of Classic Tomato Sauce (page 56) or Spicy Meat Sauce (page 57) on top.

Variation: Saffron Risotto

We couldn’t not include this seasonless classic. Buy the best-quality saffron threads you can find. The saffron pairs perfectly with Bouillabaisse Balls (page 23)

Seasonal Risotto

We change up our risotto at least once a week at the Shop, so we have sixty or seventy rotating variations that reflect each season. Here are five of our favorites, one from each season, along with a classic basic recipe and a Venetian saffron variation. When making risotto, remember that the key is to stir the rice vigorously for the first half of the cooking process to create the creamy texture that is essential to the dish. Once the rice kernels become soft, stir more gently so as not to break them up.

Viva la México Balls

The vibrant flavors of Mexico pop in these balls that we created for a Cinco de Mayo party. Pork meatballs get a kick from a splash of tequila, the smoky heat of ancho and guajillo chiles, along with a fragrant touch of cinnamon and cumin, reminiscent of carnitas, the traditional Mexican spiced, braised pork. Serve these with Salsa Roja (page 66). To serve alongside margaritas, try them as mini balls.
