Quince-Date Chutney

The flavor of this chutney improves if made at least one day ahead. Serve with: Indian dishes (such as basmati rice and curries), lamb, duck, pork chops, or sharp cheeses.

Jellied Chicken and Coriander "Terrine"

Terrines — molded preparations of meat, fish, or vegetables — are wonderfully rich and dense. This chicken variation, with a fraction of the calories and fat of a traditional terrine, draws its structure and moistness from aspic and its lively seasonings from China. To accompany it, try Japanese soba noodles — their springy texture contrasts with the terrine's smooth gel and tender chicken — and fast-cooked snow peas , for crunch.

Macadamia and Ginger Stuffing

The sweet bread called for here was introduced to Hawaii by nineteenth-century Portuguese immigrants. The stuffing can also be cooked inside the turkey, provided the bird is roasted immediately after being stuffed. For more flavor, rub the turkey with a mixture of salt and pepper and two tablespoons each of sesame oil, orange juice and lime juice, and let it marinate overnight.

Australian Pavlovas with Ginger and Tropical Fruits

These individual Pavlovas are inspired by the popular Australian dessert (named for the Russian ballerina), which combines crisp meringue with whipped cream and assorted fruit. It's easy to form the cups with a pastry bag, but if you don't have one, try this technique: Drop the meringue by half-cupfuls onto the baking sheets, then use the back of a spoon to create a deep, wide indentation in the center of each.

Tandoori-Spiced Chicken with Tomato-Ginger Chutney

Not only is the yogurt marinade an excellent tenderizer, but it imparts a nice, mild tang as well. Begin marinating the chicken one day in advance.

Fun Shrimp

When fresh wide rice noodles are stir-fried, they are called fun. Fresh rice noodles have to be pulled apart and fluffed before cooking.
