Cilantro-Lime Crab Salad in Avocado Halves
This springtime dish would go nicely with sliced red and yellow tomatoes drizzled with balsamic vinaigrette; offer corn muffins, too. End the dinner with wedges of chocolate mousse cake.

Modern Mince Pie
This dessert, long favored by the British at holiday time, originally contained minced meat along with the fruits and spices. This version, more suited to the nineties table, is meatless and brimming with apples, dried fruit and lots of spices.
Lemon Cornmeal Cake with Raspberry Filling
Cornmeal gives this cake a coarse texture that is a delightful foil for the smooth filling and whipped cream frosting.
Creamed Lemon Spinach
Here's an easy but sophisticated side dish that makes a great accompaniment to prime rib, pork chops or veal.
Vegetable Couscous Paella
Saffron lends authenticity to this fragrant dish, which draws its inspiration from the paellas of Spain. Serve a green salad alongside, and uncork a bottle of Pinot Grigio.
Grilled Citrus Salmon
When preparing this menu, we suggest grilling the mango first, then the sofrito bread, and finally the salmon.
Can be prepared in 45 minutes or less but requires additional unattended time.

Tequila Mockingbird Marinade
Here's a marinade that was inspired by the spicy food served at a favorite Connecticut restaurant of the same name. It's nice for jumbo shrimp, sea scallops and chicken. The recipe makes enough to marinate about 1 1/2 pounds of seafood or poultry. Any marinade coming in contact with raw meat, seafood or poultry must be boiled for one minute before using it for basting.
Lemon-Lattice White Chocolate Cake
The contrast of the subtle white chocolate cake and frosting with a tart-sweet lemon curd filling is superb.
Cocoa Angel Food Cake with Orange Glaze
This cake has all the lightness of its pale vanilla with an extra fillip of chocolate flavor from the cocoa powder added to the batter; the orange glaze brings out the chocolatiness even more. And the self-rising cake flour, which helps the dessert to rise triumphantly high, virtually guarantees a perfect-every time creation. A flavorful sherbet, such as banana or raspberry, makes an ideal accompaniment to this cake.
Lemon Fennel Shrimp with Tarragon
Can be prepared in 45 minutes or less but requires additional unattended time.
Moroccan Chicken with Kumquats and Prunes
For a great one-dish meal, serve this rich stew over rice. If you want to make it even more authentic, use couscous, a small grain-shaped pasta that is often found in North African and Middle Eastern cooking. It's available at many supermarkets and specialty foods stores.
Chicken with Mild Red Chili Sauce
To round out the meal, present warm pita bread and a mixed green salad with the chicken. A chilled Marsanne or Chardonnay is nice alongside.
