Chipotle

Low-Fat Chipotle Chutney Dressing

Can be prepared in 45 minutes or less.

Chicken Mole with Chipotles

Mole, a classic Mexican chili sauce, gets streamlined here. Chipotle chilies (available canned at Latin American markets and many supermarkets) add heat, while unsweetened chocolate provides subtle sweetness. Serve the stew in shallow bowls with steamed rice. Add an arugula, orange, and red onion salad and a basket of warm corn tortillas. For dessert, offer cinnamon-spiked hot chocolate and wafer cookies.

Short Ribs Braised in Coffee Ancho Chile Sauce

Chef Robert Del Grande of Cafe Annie, in Houston, serves a fillet of beef with a coffee chile sauce — we think the flavor combination also works well with the succulence of short ribs. We recommend serving these ribs over soft polenta. Active time: 40 min Start to finish: 4 1/2 hr

Beef with Three-Chile Butter

Medallones de Filete con Mantequilla de Tres Chiles Gaia, a beautifully restored house-turned-restaurant, located in one of the country's oldest cities, blends Mexican and Mediterranean cooking. One of the best dining spots is upstairs overlooking the patio and garden. If you get a chance, take a peek at the bottom of the pool. Legend has it that the mosaic of the fertility goddess was created by Mexican artist Diego Rivera for Mario Moreno (known as Cantinflas), the famous Mexican actor who once lived in the home. At Gaia, french fries sprinkled with cayenne pepper accompany the beef.

Feta-Stuffed Rack of Lamb with Pumpkin-Seed Crust and Chipotle Sauce

At the restaurant, the lamb is served with cilantro-corn mashed potatoes.

Chipotle Corn Bread

Moist, with subtle heat from the chipotles.

Panfried Almond-and Sesame-Dusted Chicken

Chef Lisa Ahier likes the flavor of Key limes or Mexican limes, which she can buy locally and year-round, for the marinade below. But even if you use regular lime juice, you'll love this chicken, which is as delicious at room temperature as it is hot. In fact, Gourmet's food editors couldn't get enough of it.

Grilled Pineapple Tart with Raspberries and Chipotle Cream

Before grilling the pineapple, be sure to preheat your grill rack and then clean it with a metal brush to remove any bits of previously grilled food, which can give an off flavor to the pineapple. This recipe makes great use of the Börner V-slicer*. Other adjustable-blade slicers also work well, but if you don't have one, you can use a sharp 10-inch chef's knife. The smooth-sided tart in our photo was made in a springform pan, but since the crust is very delicate, it's much easier and less likely to break when made in a round tart pan with a removable bottom as called for in the recipe below. Active time: 50 min Start to finish: 1 1/2 hr

Tamarind Recado

Tamarind seasoning paste Smoky, earthy, and with a sweet-and-sour tang, this recado is also delicious on pork, beef, and venison.

Shrimp and Crab with Cocktail Salsa

Chipotle chilies are the secret to this sassy cocktail sauce.

Pickled Corn Rounds with Coriander

Active time: 20 min Start to finish: 4 hr

Ranch-Style Poquito Beans

Poquitos are small, pinkish-brown beans indigenous to the Santa Ynez region. Dried pink beans are a good substitute.

Smoky Bean Salad with Molasses Dressing

Molasses combines with canned chipotle chilies to give the delicious salad its smoky, robust flavor. Begin preparing this well in advance so that the dried beans get the proper amount of soaking time.
