Hainanese Chicken Rice
This three-in-one dish (chicken, rice, and soup) originated in Hainan, a tropical island off China's southern coast, and has become a culinary staple in Malaysian culture.
Mussels with Tomatoes, Jalapeño and Tequila
"While in Sarnia, Ontario, on business, I stayed at the Village Inn and had dinner at its restaurant, Monet's Table," says Melanie Cooke of Calgary, Alberta. "I thought I was being adventurous when I ordered the mussel appetizer my first night there. Obviously I'd lost my sense of adventure when I went back the second night and ordered it again."

Monkfish Saganaki
A taverna standard, saganaki (fried cheese slices) is named for the two-handled pan it's cooked in. Here, the cheese is melted to make a sauce for fish. Chef Costas Spiliades uses a medium-textured feta, such as Mt. Vikos or Dodoni brands, for this dish. He also uses a Greek Chardonnay, Katsaros, which is sold at some U.S. wine shops.

Mother's Everyday Pimento Cheese
If you really want to make this pimento cheese the way my mother does, and you happen to own a hand-crank meat grinder, run the two cheeses once through the fine blade of the grinder into a mixing bowl. Mother simply used to grind the pimentos with the cheeses, but now she prefers to mash them with a heavy fork on a plate until they break up into tiny pieces.
She uses homemade mayonnaise but also endorses Hellmann's (a.k.a. Best Foods).

Inspired by Florida chef Norman Van Aken's mango habanero mojo, this sauce is a wonderful accompaniment to grilled pork or chicken. Be sure to wear protective gloves while mincing the chile.

If you arrive for breakfast at the refined La Olla Restaurant & Bar, head to the rooftop dining area, where you can survey the city as you dine in the shade of an umbrella. No matter what you order, be sure to try the cheese with green salsa, which is served with fresh, homemade tortillas. When you're done with your feast, you can walk to the historic Santo Domingo church or the zócalo (the central square).
You can use more or less sugar, depending on the acidity of the tomatillos.
Chayote Soup
The delicately flavored fruit chayote is ubiquitous in the central highlands of Mexico. It varies greatly in size, ranges in color from white to dark green, and can have prickly or smooth skin. The variety most commonly available in the United States (also known as a vegetable pear or mirliton) has smooth, pale green skin that can be eaten but is sometimes removed.
Corn with Fresh Herbs
I devised this dish for a benefit party to aid my husband's chamber music group, Clarion Concerts. It was the middle of August, in the heart of the corn season. Keeping up the tradition of Indian migrants the world over, I find myself adapting Indian spices and techniques to the best of American ingredients.
