Pear and Almond Tart

We rarely order dessert, but we couldn't resist the pear and almond tart. We have five pear trees of our own at home, so we could most definitely make good use of the recipe. Could you get it for us?"
To create the most flavorful tart, be sure to use very ripe pears.
Rosie's Baklava Ice-Cream Cake
We couldn't wait to get into our test kitchens to try Rosie’s baklava ice-cream cake. As inspired as the dessert was, it was also a big production, resulting in a giant cake with 2 layers of ice cream and 3 layers of baklava. With Rosie's permission, we downscaled the recipe and tweaked it a bit, for a dessert that’s still delicious but more manageable.
When working with phyllo, be sure to have plenty of clear counter space and a chunk of uninterrupted time. Phyllo dries out in the blink of an eye, so it is imperative that you keep your stack of phyllo sheets well-covered and work only with 1 sheet at a time. Allow at least 20 minutes to chop the nuts by hand.

Maple Baked Apples with Dried Fruit and Nuts
This is a simple, delicious dessert that also makes a warming and special brunch dish or breakfast. Although many baked-apple recipes are on the lean side (my mother always ate them when she was dieting), my version is luxurious yet still homey. I stuff the apples with a mix of brown sugar, dried fruit, and nuts, then bake them in a sauce of apple cider, maple syrup, and plenty of butter, which cooks down to a rich, thick glaze. I like to use Cortlands here because of their good squat shape and their complex fruity flavor, but any firm, tart baking apple will do.
Apple-Almond Cheesecake
Apples sautéed with brown sugar and cinnamon top this almond-flavored cheesecake. Bake it at least one day in advance. For best results, use Philadelphia-brand cream cheese.
